Homemade Roasted Salsa Verde
Roasted Salsa Verde
Ingredients:

1 lb tomatillos, husked and washed.

1 heaping cup of Roasted Hatch Green Chile (Can also sub in 1 Jar of Hatch Green Chile Sauce)

2 jalapeños (roasted)
-
1/2 cup chopped Spanish onion
-
1/2 cup green onions
-
3/4 cup fresh cilantro leaves
-
2 teaspoons fresh lime juice
-
1 teaspoons cumin
-
2 tablespoons of pork roast drippings.

Himalayan pink salt to taste
Instructions:
-
Place Tomatillos in a saucepan and cover with water

Simmer until they are soft and the tomatillos' skins has split

Drain, in a food processor pulse to pureed
-
Add in the pork roast drippings, Roasted Hatch Green Chile, jalapeños, and onions
-
Add in seasonings and pulse until pureed
-
Refrigerate leftovers, serve with homemade chips …Great pairing with pork Tamales .
