Homemade Roasted Salsa Verde

Roasted Salsa Verde

  • 1 lb tomatillos, husked and washed.
  • 1 heaping cup of Roasted Hatch Green Chile (Can also sub in 1 Jar of Hatch Green Chile Sauce)
  • 2 jalapeños (roasted)
  • 1/2 cup chopped Spanish onion
  • 1/2 cup green onions
  • 3/4 cup fresh cilantro leaves
  • 2 teaspoons fresh lime juice
  • 1 teaspoons cumin
  • 2 tablespoons of pork roast drippings.
  • Himalayan pink salt to taste


  1. Place Tomatillos in a saucepan and cover with water
  2. Simmer until they are soft and the tomatillos' skins has split
  3. Drain, in a food processor pulse to pureed
  4. Add in the pork roast drippings, Roasted Hatch Green Chile, jalapeños, and onions
    Add in seasonings and pulse until pureed
  6. Refrigerate leftovers, serve with homemade chips …Great pairing with pork Tamales .
