Product Description

Big Jim (what we grow for medium) is a  large, meaty variety ranging in size from 7-10 inches in length and varies in heat levels.

Developed in the 1970′s by Dr. R Nakayama at New Mexico State University, Big Jim is literally the largest variety of hatch green chile grown in the US (it’s in the guinness book of world records). Big Jim thrives in the climate and soil of the Rio Grande river valley but is easily damaged by heavy rains and high humidity. Plants are small in comparison to the giant pods they yield and you can find dozens of pods on a healthy plant during the harvest. Big Jim is more of a medium-hot as pods vary a great deal in heat but, that’s what makes it a family favorite. When chopped, the mixture makes for a great medium heat for enchiladas or burgers. This variety is also our personal favorite for making chile rellenos and ristras due to its great size and thickly meated pods. Rellenos made with the largest Big Jim pods can hold up to a half a pound of hamburger meat. They really are that big!  We offer 5, 10, and 25lb boxes of Big Jim as our medium heat variety of fresh hatch green chile and it is our perennial bestseller. (I am in Virginia so it came a long way) The chile was fresh, large peppers, no spoilage and delicious. Price was very competative.     I was born in New Mexico and raised on Mexican food and I always remembered Hatch Chilies. I live in Virginia and chillies are hard o find. Prior to discovering Berridge Farms on the Internet I mistakenly purchased chilies from another vendor. I got my chilies today and I tell you now that these are by far the best anywhere and you can not beat the price and service anywhere ! ! !

    The Big Jim Medium Hatch Chilis are the best I’ve ever had. I got hooked about 5 years ago, visiting Arizona. We got in on the tail-end of season. Ever since, I’ve ordered every year to have in Florida. Even with the huge Hispanic population down here, they have NO clue what a real chili is until they’ve tried Hatch Green Chile. Thank you!

    OMG!!!! These green chilies are the bizzomb !!!! Eating them tonight at supper took me back to Hatch when I visited the Lopez family!!!!! We ordered 25lbs of the Big Jims and WOW!!!!!!! Totally blown away by how good the flavor is and the spiciness of the Big Jims is PERFECT!!!!! Not too spicy, but just enough to give it that wonderful kick!! Thank you so much for being online so we can enjoy these great green chilies in Louisiana!!! THANK YOU!!!!!!

    Just received a 10 lb pkg that looks great and mature and I immediately began roasting them. I’m finding that the blackened and blistered skins are sticking to the chili meat, rendering most of my effort a complete loss. I wonder if the chilies need to ripen more? I have ordered before and roasted chilies many times with no problems. Is there something unusual about this year’s crop? Any suggestions? Thanks.

    We moved our Roaster from NM to KY and had not had fresh chili in 8 years. I ordered 10 lbs of Medium and when it arrived I was thrilled. The chili were so fresh and smelled so good……it was heaven in a box!!!!!! I will always order from Berridge Farms.We set the roaster up on the driveway and it was wonderful. Great Chili-Thanks

    I spent some time this summer in the Hatch, NM area and enjoyed many different dishes using NM green chiles.
    When I returned home to Michigan, I decided to let my friends here enjoy the same experience.
    I tried ordering from several different sources without success until I found this site.
    My order was processed and shipped promptly. My chiles arrived in perfect condition.
    I will definitely be ordering more next year!

    My wife bought a 10 pound box of fresh Big Jim medium chiles for my birthday
    and I wanted to thank you for the wonderful service. The chiles arrived in
    perfect condition and were promptly roasted on my bbq grill. Saturday and so
    far today every meal has contained them and have all been wonderful meals.
    These included an egg scramble with chiles, black beans, cheese, and
    cilantro; A stacked, chile lasagne with fried corn tortillas, braised beef,
    and a chile & cottage cheese blend. the sauce the beef simmered in was
    chiles, tomatillos, onions, and beef stock. This morning we had bacon
    waffles topped with chiles, cheese, a soft fried egg, and a light drizzle of
    maple syrup. All have tasted excellent thanks to your chiles so once again,
    let me thank you for your wonderful service.

    I spent eight years between Albuquerque and Roswell New Mexico. In the Fall my delivery route would take me to the Bernalillo NM area . Each year I looked forward to my burlap sack full of hot chilis. I moved to Chicago Illinois and thought a hot chili would be no problem to buy. I was wrong. Even though Chicago has a gigantic Latino population, only a no-taste – no heat Chili pepper variety called Anaheim was available. Also Serrano, and Poblano but none of these came close to real New Mexico chilies.

    I saw a TV special on Hatch Chile while flipping channels one evening, looked up the website and ordered 20 pounds. I received the boxes.One was unspoiled and delicious the other box had damage. The chili seller replaced the damaged chili no questions asked and was also savvy enough to pay the freight on the replacement ten pounds; I noted that. That is customer service. I have full intention of buying this product from Berridge Farms in Hatch New Mexico. They have rekindled my love of Tex-Mex food and my faith in American business ethics.

    The medium hatch green chiles are meaty, however the ones we’ve tried so far did not have much heat. Tasted more like mild. I will order the hot ones next time.

    Being a native New Mexican living in Louisiana, we miss our chilies and when our order of Big Jims and mild arrived, we were so excited to see those lush, beautiful chilies again. They were in pristine condition and smelling them roast in our chili roaster brought home back to us. Your service is excellent and the chilies couldn’t get any better than right out of the field. Such a beautiful crop! We will definitely be repeat customers. Thank you!

    So far I have tasted both the mild and the Big Jim. Both are excellent. However, Big Jim was nearly everyone’s favorite here in Juneau, AK. When my order arrived friends and family seemed to arrive as if by magic at our door step. We all felt that Big Jim was the perfect combination or warmth and flavor. When the Big Jim order, arrived they were firm and crisp and meaty. Fixed Big Jim last night to make up some chili. I used 4 Big Jim in the recipe and it turned out perfect. I also made up a recipe using Big Jim layered over baked fresh King Salmon. It too was perfect and did not last long enough for leftovers.

    I gave a little bit of mild, Big Jim and Sandia to the staff at my office and they all liked Big Jim best. What else can I say? One friend though is from NM and they like their chile hotter so they preferred the Sandia.

    My husband was born in Albuquerque and we met in Arizona, but now live in Virginia, where you cannot find green chiles. Seriously, even the so-called New Mexican restaurant makes their green enchilada sauce out of tomatillos, not chiles. This is our 5th year ordering from this place and the chile has always been fantastic – arriving in great condition and tasting even better. They’ve been great in terms of shipping, too, scheduling around our vacation time, if need be. The Big Jim’s vary each year in exactly how much heat they have so this year we’re adding in some Sandia’s to make sure we get a good amount of heat.
