Hatch Chile stuffed with Shrimp

- Fresh Hatch Green Chile

- 2tbs butter melted

- Leeks

- 1 tsp minced garlic

- 16oz cream cheese

- 1/2 cup shreeded Oaxaca cheese

- 1lb chopped shrimp

- 1lb tail on shrimp

- 1/4 cup panko

- Salt & Pepper to taste


1. Preheat your over to 350 F.

2. Halve your Fresh Hatch Green Chile peppers and remove the seeds.

3. Brush the Fresh Hatch Green Chile with melted butter and put in the oven and bake for 10 minutes.

4. In a small pan, saute leeks, minced garlic, cream cheese, shredded Oaxaca cheese, pepper, and chopped shrimp together until fragrent. Let cool.

5. Stuff peppers with the cheese and shrimp mixture.

6. Top with panko and place in oven for 5-10 minutes until golden brown.

7. Broil or saute tail on shrimp to top with.
