How should I store jarred Hatch chile products?
All jarred sauces and salsas are shelf-stable until opened. Store unopened jars in a cool, dry place for 12–18 months.
Once opened, refrigerate and use within 2–3 weeks for best flavor. For longer storage, freeze in a freezer-safe container (leave room for expansion) for 6–12 months. Thaw overnight in the fridge.
How does shipping work for jarred products?
Jarred sauces and salsas are non-perishable and ship Monday–Friday from New Mexico via ground. Typical delivery: 1–4 business days.
Unlike our frozen products (roasted chile, tamales, rellenos), jarred items don't need cold shipping—making them much more economical to order.
Can I order jarred and frozen together? Yes! They ship separately. Jarred items ship ground from NM; frozen items ship from NJ and CA distribution centers to arrive frozen.

5th-Generation Hatch Valley Family Farm
These sauces and salsas represent more than a century of Hatch Valley chile farming. Our family has been growing chile here since Joseph Franzoy became the first commercial chile farmer in Hatch, New Mexico. We're now in our 5th generation, and every jar carries that legacy.
Many of our Ol' Gringo products come from recipes passed down for generations—Ed Berridge founded Berridge Farms in 1944, and his red sauce recipe is still made by our family each year. What makes Hatch chile different from other green chiles?
Hatch chile is grown exclusively in the Hatch Valley of Southern New Mexico. The valley's unique combination of volcanic soil, hot days, cool desert nights, and Rio Grande irrigation produces chile with distinctive flavor compounds not found in chile grown elsewhere. NM state law prohibits labeling chile as "New Mexican" unless it's grown in-state, and independent testing shows Hatch varieties contain up to 5 times the flavor compounds of similar varieties grown outside the region.
What's the difference between Hatch chile sauce and salsa?
Sauces are smooth, pureed preparations for cooking—enchiladas, smothered burritos, green chile gravy, stew bases. They pour and coat evenly.
