Astounding! I absolutely can't believe the night and day difference between this product and the lackluster flavor of what I have been buying in cans from my grocery. I wasn't prepared for the smoky intensity of these freshly roasted jarred chilies. Honestly, a spoonful tossed with some cheese and ranchero sauce in a tortilla could turn me vegetarian. And wait until you top a burger with it!

I LOVED opening my box of chile when it arrived from The Hatch Chile Store! The box came with special insulation and a block of dry ice to keep all the chile packets nicely frozen. I saved myself a ton of work (and time) by ordering my authentic Hatch Chile online, and you should too. AND since they offer so many options, I purchased MY perfect chile. It tastes just as if I had roasted it yesterday myself. Fresh and delicious!

When the chili arrived I immediately opened the sack and snapped one chili and put the stem end piece in my mouth (a chili connoisseur) and chewed on it until it was rehydrated. I should have stopped sooner. Wow, it was very hot, just exactly what I ordered and needed to make hot tamales. We have a tradition, since 1975, and make tamales on Christmas Eve. We've done this while my wife an I were in the Air Force all over the world. Our friends both Americans and natives of the country loved them. We relied on our parents to send us the stuff needed to make them. Not readily available in other parts of the world. Now we have Hatch Chili company to supply us with all the New Mexico chili, red or green and we look forward to the season when it comes available. Just like New Mexicans, our friends up here in the Great White North, U P of Michigna, also enjoy when we roast green chili, cook burgers and drink cold beer. My husband loves Hatch Pure Green Chile roast. He puts it in stew, soups, on burgers, spagetti, sandwiches and even in creamy salad dressings. His variety of choice is HOT. We've gifted some to my nephew also and his family also loves it. I prefer medium, but it sells out fast.

I love my Big Jim green chilies from Hatch Chili Company. I pre order them every year! Hands down our family favorite for rellenos ! They are worth the wait!

This is a great roaster. Well made and the perfect size for small batches. This amount of chiles would have taken a few hours on the grill and the roasting would not be very uniform. The medium roaster had them done in a matter of minutes. I would recommend this roaster to anyone looking to get away from the grill. Now we have wonderful roasted chiles in Kentucky! Great job folks!

Best chili I’ve had in a long time, we are all stocked up and ready for the holidays. I gave family chili as well. We have made chili verde, green chili chicken enchiladas, green chili chicken soup can’t wait to order next year

I and my husband were raised in New Mexico and moved to Stone Mountain, GA (Atlanta) in 1985. We have always kept our southwestern green chile roots and discovered Hatch green chiles after we moved away. I ordered 25 pounds this year, they arrived on a Friday (I brought them into the house and separated them as much as possible due to the heat and obvious humidity here in Geogia). On Saturday, I fired up my grill and roasted them. They are/were amazing!! I spit them up, froze most and my husband and I had chile rellanos that night and left overs for the next day. Then, I unfroze a pack and made more rellanos for my brother (also from NM) and his wife and they were blown away at how awesome they were. Granted, I'm a good NM cook but you can't get that flavor except from the best. I'm so anxious to share these chiles with my son, that was born in Georgia but is a true New Mexican at heart. He was eating chips with salsa at the age of 2 and on our first trip to Albuquegue with him at 5, he order jalapeno poppers and ate them all without flitching.

My Dad grew up in Aztec, NM, so I grew up eating Hatch Chiles and many other kinds. I love making salsas and continued my Dad’s tradition of salsa for my kids! Any kind of pepper is very expensive in New Zealand, so it is rare to be able to enjoy home made salsa like I made for her when she was growing up! These peppers will now make it easier for her to make some spicy food that she longs for! Thank you for making them this way! Having grown up in the southwest; we've always made our enchilada sauce from scratch; using Hatch Chile Peppers. Now that we have moved from the area, Abuela's Traditional Hatch Red Chile Sauce is our go to answer for "home made." Perhaps even better! We highly recommend this product for that traditional tasting red chile sauce.

We ordered the 2.5 foot edible ristra, arrived in perfect shape, we immediately started the tasks of converting it to red chili sauce. After completing, we couldn’t resist making red chili and hamburger meat over Fritos with cheese. This red chili is amazing and will be great with our homemade tamales and Carna Asada. Will definitely order again.

Absolutely more than expected. I air fried my rellanos from frozen and they were outstanding. Better than most restaurants. The heat was perfect and the cheese is smooth and tasty. They are big and worth the money. I will for sure order more. I’ve been a fan of Hatch Green Chile’s for many years. First time rellano buyer. Glad I did.

This cookbook was purchased as a gift for my youngest son. He liked it so much that he told my oldest son all about it, so I had to purchase one for him too. I recommend this cookbook to anyone that likes Hatch Chile recipes with a little heat.

The beans are THE BEST! PERFECTION! They cook up soft and with a milky delicious broth. We love these!

It’s been… over 25 years… since I lived in Albuquerque, where I would have my green chiles roasted in an industrial-scale version of your Medium Chile roaster at a grocery store every year. When I saw them in your store this year, there was an audible gasp. I immediately ordered one well just to make sure I’d have and be ready before my chiles arrive. It arrive in great shape and this past week I chanced across 5# bags of serranos at a restaurant supply store, so got one to give my new toy an early “test spin”. It was, in a word, MAGNIFICO! I nearly shed real tears of joy. This is SO much better than roasting them on a gas grill, as I have been doing all these years. Each pod is much more evenly roasted and the whole batch is much more uniform than one could possibly do on a grill. And more quickly too. There’s more blistering of the skin from intense flame with less “cooking” the flesh. And there’s nothing quite like the unique aroma of chiles blistering under the correct heat. The sight and smell transported me straight back to The Land of Enchantment like I had never left. My wife was skeptical when I told her I’d bought it, but after seeing it in action and the results with the serranos she can’t wait for our fresh batch of NM chiles to arrive. I might even have to motorize it some day! (But if you come out with a kit for that in the meantime, let me know!!! 😁) I think a short video on your website would turning seeing into understanding and believing for those who’ve never had the opportunity to get the “full New Mexico” chile roasting experience in person. I am originally from the Southwest - El Paso, TX and moved to NYC 25 years ago. It has been hard to get good chile here especially green chile... The fact that I can get it different levels of "heat" is great. I love the XHot and I can get it on subscription... Love it! I do order the milder brands for the non pepper bellies in my friend circle! I had support reach out to me due to the XHot not being available for my subscription but it was an easy interaction and they offered a different level as a replacement. I made the change but then they got the XHot back in stock and they reached out to me again with the option. Great Customer Service. The quality of the product is stellar and I am super picky! Thank you Hatch Chile you have made us a happy household here in NYC bringing us authentic Chile to the Big Apple!!!

These medium red Chile pods were the finest quality I have ever seen. They also produced the best tasting red Chile I have ever made! The peppers were perfectly dried without mold as some ristras I have seen develop. You must try these for your next batch of red Chile!
