I ordered this roaster early this year in anticipation of roasting a whole box of fresh chiles when they became available in the fall. This is very well constructed, assembles quickly and will roast just about anything that you need to roast. Things like bell peppers, tomatoes, tomatillos, etc. Great product!

Yes. Every order from The Hatch Chile Store ships with dry ice in an insulated box. We ship Tuesdays and Wednesdays only. Most orders arrive frozen solid in 1 to 3 business days anywhere in the US. If anything shows up thawed, contact us. We'll make it right. 100% satisfaction guaranteed.

Yes. Our roasted Hatch green chile is flash frozen at harvest and ships every week, all year, from The Hatch Chile Store. Fresh unroasted chile is only available during harvest season from July through October.
Yes. Thaw what you need in the fridge overnight and refreeze the rest. Each vacuum-sealed bag is 1 lb. Quality stays good for 12+ months at 0°F.
Most canned "green chile" is Anaheim pepper grown in California or Mexico, packed in vinegar brine for shelf life. Our Hatch green chile is a different pepper entirely, grown on our family farm in the Hatch Valley of New Mexico and flame-roasted the traditional way. No brine, no vinegar, no preservatives. We've been farming chile here for five generations, since 1917. The Hatch Chile Association certifies our product as authentic Hatch Valley grown.
Yes. Our Hatch green chile is fully flame-roasted, hand-peeled, vacuum-sealed, and flash frozen. Just thaw and add to your food. Available chopped or whole. Zero prep, zero mess.
Chopped is the easier pick for most recipes. Use it in green chile cheeseburgers, breakfast burritos, eggs, queso, green chile stew, soups, and mac and cheese. Whole is what you want for chile rellenos, layered enchiladas, or sandwiches where you want a full roasted pepper. If you're not sure, go with chopped.
Each box is 5 lbs (five 1 lb vacuum-sealed bags). That's roughly 10 to 15 meals depending on how heavy you pour. Most repeat customers order 2 to 3 boxes to stock their freezer and save with our volume discounts (up to 30% off at 4+ boxes). If you cook with chile a few times a week, 10 to 15 lbs will last 2 to 3 months.
