Hatch Green Chile Cornbread

Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 cup milk (I used half and half)
  • 1 egg
  • 1/4 c. oil (I used coconut oil)
  • 1-2 tbsp. honey
  • 1/2 tsp. salt
  • 4 tsp. baking powder
  • 1 cup corn kernels
  • 3/4 cup Peeled, Chopped Rasted Hatch Green Chile.

Instructions

1. Preheat oven to 425 degrees.

2. In large bowl, combine corn meal, flour, baking powder and salt.

3. In small bowl, combine milk, egg, oil and honey.

4. Combine wet and dry ingredients and beat until fairly smooth.

5. Pour in chopped and Roasted Hatch Green Chile and corn kernels and stir briefly to combine.

6. Bake in greased 8-inch square baking pan for 20-23 minutes or until toothpick in center comes out clean.
