Hatch Red Chile Enchiladas

1. Preheat oven to 425 degrees.
2. In large bowl, combine corn meal, flour, baking powder and salt.
3. In small bowl, combine milk, egg, oil and honey.
4. Combine wet and dry ingredients and beat until fairly smooth.
5. Pour in chopped and Roasted Hatch Green Chile and corn kernels and stir briefly to combine.
6. Bake in greased 8-inch square baking pan for 20-23 minutes or until toothpick in center comes out clean.
If you don't have any of our Roasted Hatch Green Chile on hand you can also roast your own Fresh Hatch Green Chile or use our Pure Hatch Green Chile.
