Hatch Green Chile Cornbread

-1 c. cornmeal

1 c. all-purpose flour

1 c. milk (I used half and half)

1 egg

1/4 c. oil (I used coconut oil)

-1-2 tbsp. honey

-1/2 tsp. salt

-4 tsp. baking powder

-1 c. corn kernels

-3/4 c. Hatch Green Chile Roasted, Peeled, & Chopped


1. Preheat oven to 425 degrees.

2. In large bowl, combine corn meal, flour, baking powder and salt.

3. In small bowl, combine milk, egg, oil and honey.

4. Combine wet and dry ingredients and beat until fairly smooth.

5. Pour in Roasted and Chopped Hatch Green Chile and corn kernels and stir briefly to combine.

6. Bake in greased 8-inch square baking pan for 20-23 minutes or until toothpick in center comes out clean.
