Our Dried Hatch Red Chile Pods are available in 8 oz and 16 oz bags and are ideal for making authentic red enchilada sauce from scratch. We offer mild, medium, and hot heat levels, so you can choose the perfect flavor for your kitchen. All of our red chile pods are certified to come from the Hatch Valley of Southern New Mexico, ensuring true Hatch Chile quality and flavor.

Traditionally used to make New Mexican–style red enchilada sauce, these dried red chile pods are also perfect for crushing into homemade red chile flakes. Use them as a spice or topping to add bold flavor to pastas, pizza, and any dish that could use a little extra heat.
