  • I am not a fan of meatloaf, and I have not ever been to be honest. However, I thought I would give this a try, since the ingredients looks good. I did find that there was far too much moisture in the finished product. The meatloaf did not bind very well at all. The Rotel chiles should be drained, and I think it would not hurt to add more bread crumbs and perhaps another egg. Onions have a great deal of moisture content, and they could be sweated to reduce the moIsture even further. Having said that I found the flavor of the meatloaf to be excellent.
