This Hatch Green Chile Margarita is a fresh, smoky twist on a classic cocktail that brings a little New Mexico magic to happy hour. Bright lime, good tequila, and a homemade Hatch Green Chile syrup come together in one beautifully balanced drink that's equal parts refreshing and unforgettable.

A great margarita is already one of life's simple pleasures. But add a homemade Hatch Green Chile syrup to the mix, and you've got something that people will still be talking about long after the last sip. This is the cocktail you bring out at your next gathering and watch become the star of the evening.

The chile syrup is the heart of this drink, and the good news is it couldn't be simpler to make. Just combine equal parts chopped Roasted Hatch Green Chile and sugar, let it sit overnight so all that smoky, roasted flavor can work its way into a beautiful syrup, and strain. What you're left with is something sweet, smoky, and just a little spicy — and it plays perfectly against the tartness of fresh lime juice and the warmth of a good tequila. Short on fresh chile? A pinch of our Hatch Green Chile Powder stirred into the syrup deepens the heat beautifully.

This is a cocktail worth making with fresh lime juice — not the bottled kind. The difference is noticeable, and a drink this special deserves the real thing. Shake it until the shaker frosts over, pour it over ice, and finish with a salted rim, a lime wheel, and a few slices of fresh jalapeño if you really want to lean into the heat. One sip and you'll feel like you're sitting on a porch somewhere in the Rio Grande Valley watching the sun go down over the chile fields. Cheers to that.

Frequently asked questions

How do you make green chile syrup for a margarita?
Combine equal parts chopped Roasted Hatch green chile and sugar in a bowl, stir, cover, and let it marinate overnight. The sugar draws out the chile's smoky, roasted flavor into a syrup. Strain it through a fine-mesh strainer and store in an airtight container in the fridge. A pinch of green chile powder boosts the heat.
What does a green chile margarita taste like?
A green chile margarita tastes bright and tart from fresh lime, smooth and warm from tequila, with a smoky-sweet finish and a gentle building heat from the roasted Hatch green chile syrup. The chile adds depth and a slow warmth rather than sharp spice, balancing the sweetness for a refreshing, complex cocktail.
Can you use green chile powder instead of fresh chile?
Yes — if you don't have fresh roasted chile, stir a pinch of Hatch green chile powder into a simple syrup for a quick, concentrated version. The powder delivers the same smoky depth and heat without the overnight steep. Start small and taste, since powder is more potent than chopped fresh chile.
What tequila is best for a green chile margarita?
A good blanco (silver) tequila is best — its clean, crisp agave flavor lets the smoky green chile and fresh lime shine. Reposado works too if you prefer a slightly oaky, mellow warmth. Avoid heavily aged añejo, which can overpower the bright, smoky balance this margarita is built around.
