Every bag starts as fresh Hatch chile that we fire-roast and hand-peel before flash-freezing in vacuum-sealed pouches. By the time it reaches your door, the hard work is already done. You don't need a roaster, an oven broiler, or a grill — thaw a bag and the chile is ready to chop into your dish.

We pack in 1-pound resealable bags so you can pull just what you need and leave the rest frozen.

Frozen chile keeps for 18-24 months in the freezer

Stored continuously frozen, our chile holds full flavor and heat for 18-24 months from the date of roasting/freezing in a standard home freezer. The vacuum seal locks it in. If a bag has stayed cold and hasn't actually thawed through, it's safe to refreeze. Once it's truly thawed, treat the 5-day fridge window as your clock.

Thawing is simple — and thawed chile keeps 5 days in the fridge

Two ways to thaw:

  • Overnight in the fridge (preferred). Pull a bag the night before, set it on a plate to catch any condensation.
  • Cold-water thaw (faster). Set the sealed bag in a bowl of cold water for 20–30 minutes.

Skip room-temperature thawing on the counter — it's not food-safe for an already-cooked product. Once thawed, use the chile within 5 days stored in the fridge.

Substitution math: 1 pound frozen ≈ 2 cups chopped

A 1-pound bag of our frozen chile yields roughly 2 cups chopped once thawed and drained. Most green chile recipes calling for "1 cup chopped roasted Hatch" can be covered by half a bag. Big batches of green chile stew or enchilada sauce typically use a full pound or two.

If a recipe calls for a specific weight of roasted chile, you can substitute pound-for-pound — our chile is already in the same form factor the recipe is asking for.
