Fresh chile is not cold-shipped — no insulation, no ice packs, no dry ice. It travels at room temperature in a vented box, and speed is what protects it. We ship Wednesdays only during harvest season: Overnight arrives Thursday (recommended) and 2-Day Air arrives Friday — choose Overnight for best results. If anything arrives in poor condition, contact us. We'll make it right. 100% satisfaction guaranteed.
- Mild (0–2,000 SHU): Joe Parker, 1904 — gentle warmth. Great for queso, eggs, and kids.
- Medium (2,000–7,000 SHU): Big Jim, Charger — our bestseller. ~6,500 SHU per NMSU CR706; our pods often run milder. You'll feel a kick, but it won't take over the dish.
- Hot (7,000–11,000 SHU): Sandia Select (~9,500 SHU). Real heat that builds. For people who like spicy food.

Yes. Our roasted Hatch green chile is flash frozen at harvest and ships every week, all year, from The Hatch Chile Store. Fresh unroasted chile is only available during harvest season from July through October.
Refrigerate it as soon as it arrives. Unroasted in the fridge: 5 to 7 days. Roasted and refrigerated: about 5 days. Roasted and frozen: 12+ months — most customers roast, peel, and freeze in 1 lb portions for the year.
Most canned "green chile" is Anaheim pepper grown in California or Mexico, packed in vinegar brine for shelf life. Our Hatch green chile is a different pepper entirely, grown on our family farm in the Hatch Valley of New Mexico and flame-roasted the traditional way. No brine, no vinegar, no preservatives. We've been farming chile here for five generations, since 1917. The Hatch Chile Association certifies our product as authentic Hatch Valley grown.
No — this is fresh, raw red chile. It needs to be roasted (and usually peeled) before most uses. If you want zero prep, order our pre-roasted frozen chile instead — it ships year-round, already flame-roasted and peeled.
THIS IS A PRE-ORDER FOR THE 2026 CROP. We expect to start harvesting in SEPTEMBER/OCTOBER.
Big Jim and Charger are two of our favorite varieties. They have big meaty pods that are very easy to roast and peel. These varieties have somewhat inconsistent heat levels from pod to pod and from year to year, so expect a lot of variation. Medium pods can grow between 8 and 14 inches in length. Big Jim and Charger sit squarely in our Medium tier — approximately 2,000–7,000 SHU; NMSU CR706 puts Big Jim's cultivar mean at ~6,500 SHU, though our pods often run a touch milder.

Overnight shipping is recommended for Fresh Chile orders — it ships Wednesday and arrives Thursday. 2-Day Air is also available (arrives Friday), but choose Overnight for best results. Shipping Protection is added to your cart automatically for guaranteed quality on delivery.
We ship Fresh Chile on Wednesdays only, weekly during harvest season — picked, packed, and shipped the same day from our farm. Once pre-orders are caught up, the cutoff for each week's Wednesday shipment is Tuesday at 12:00 PM MT; orders placed after the cutoff ship the following week. Any changes (hold requests, upgraded shipping, substitutions, address changes) must also be made by Tuesday at 12:00 PM MT.
