My name is Pam, and I help with marketing and customer service here at The Hatch Chile Store. I joined the team in March and am learning so much about Hatch Chile. I thought I would take you along on my journey.
I discovered Hatch Green Chile in 2008 when our family moved to El Paso, Texas, which is just across the border from New Mexico. That was my first experience with the amazing smell of roasting chile! I’ll be honest and say that despite that amazing smell, I was hesitant to try Hatch Green Chile. I am not a fan of another popular green pepper! Boy, am I glad I realized a Hatch Green Chile is not like a bell pepper!
During the four years we were in El Paso, I didn't learn much about Hatch Green Chile besides that it is delicious and good in just about everything! Let's start with the basics
Fresh Hatch Green Chile is seasonal. Because it is only grown here in the Hatch Valley, it isn't available year-round. Before coming here to the Hatch Chile Store, I, like many people, thought it was just available in August. I was wrong about that! Hatch Chile Season starts in July and goes all the way until the first freeze which can be in late October or even November! That means there is more time to stock up on fresh chile. Of course, here at the Hatch Chile Store, we can supply Roasted Green Chile all year round.
