Yes. Every order from The Hatch Chile Store ships with dry ice in an insulated box. We ship Tuesdays and Wednesdays only. Most orders arrive frozen solid in 1 to 3 business days anywhere in the US. If anything shows up thawed, contact us. We'll make it right. 100% satisfaction guaranteed.

Yes. Our roasted Hatch green chile is flash frozen at harvest and ships every week, all year, from The Hatch Chile Store. Fresh unroasted chile is only available during harvest season from July through October.

Most canned "green chile" is Anaheim pepper grown in California or Mexico, packed in vinegar brine for shelf life. Our Hatch green chile is a different pepper entirely, grown in the Hatch Valley of New Mexico and flame-roasted the traditional way. No brine, no vinegar, no preservatives. We've been farming chile here for five generations, since 1917. The Hatch Chile Association certifies our product as authentic Hatch Valley grown.
Yes. Our Hatch green chile is fully flame-roasted, hand-peeled, vacuum-sealed, and flash frozen. Just thaw and add to your food. Zero prep, zero mess.

Frozen items are shipped UPS, and we cannot ship them to PO Boxes. Please use a physical address when checking out.
We ship frozen items Tuesdays and Wednesdays only, so your box never sits in a depot over the weekend. Order by 2 AM Mountain Time on a ship day and it goes out that day. After that it catches the next one.
Shipped with dry ice, please use gloves to remove your items if dry-ice is still present on delivery, and handle with care.
