A chile roaster is what turns raw Hatch chile into the smoky, blistered, hand-peelable form New Mexicans actually cook with. The traditional roaster is a slowly-turning steel drum heated by propane — chiles tumble inside, skins blister over open flame, and 4–5 minutes later you have a pile of freshly-roasted chile ready to peel.

For most home cooks, ordering a 25-lb sack of fresh Hatch chile and renting time at the supermarket roaster is the standard approach. But if you order chile every harvest season, host roasting parties, or want to roast on your own schedule, owning a tabletop roaster pays for itself fast. Our two sizes handle 10–25 lbs at a time — the small roaster is perfect for a 10–15 lb home order, the medium fits a 20–25 lb sack in one go.

Frequently Asked Questions

Do I really need a roaster, or can I roast Hatch chile on my grill or oven?
You CAN roast Hatch chile on a gas grill, in the oven broiler, or even on a stovetop comal — our roasting guide covers all of those methods. A dedicated roaster matters when you're doing volume: 25+ pounds at a time, or every harvest season. The drum-roaster design blisters chile evenly in 4–5 minutes per batch with no babysitting.
What's the difference between the small and medium roaster?
The Small Table Top Roaster handles 10–15 lbs per batch — perfect for a household ordering one or two 25-lb sacks per season. The Medium Table Top Roaster handles 20–25 lbs per batch — fits an entire sack in one load, ideal for hosting a roasting party or running a small commercial operation.
Are they propane or electric?
Both are propane (LP) — same fuel type as a standard backyard grill or camp stove. Plug-and-play with a 20-lb propane tank. Outdoor use only; the flame is real and significant.
How long does a 25-lb sack of fresh chile take to roast?
In the Medium roaster, a full 25-lb sack roasts in one batch in about 5–8 minutes. In the Small, two batches at 4–5 minutes each. Add 30–45 minutes after for peeling (or skip the peeling and freeze with skins on — your call).
Do you sell propane or replacement parts?
We don't sell propane (any local hardware store or U-Haul fills 20-lb LP tanks). Replacement burners and tumblers are available through the roaster manufacturer — call us at (575) 267-2067 and we'll point you at the right place.

The small table top roaster works great! Received the roaster in the afternoon along with my order of 25 lbs of green chile and finished roasting the next day. The roaster works better than the grill or broiler and is faster and does a better job. Then ordered 25 lbs of red. Thanks!

I ordered this roaster early this year in anticipation of roasting a whole box of fresh chiles when they became available in the fall. This is very well constructed, assembles quickly and will roast just about anything that you need to roast. Things like bell peppers, tomatoes, tomatillos, etc. Great product!

Well made and now we can order fresh green chile next year and roast it ourselves! We missed having it roasted after we moved from NM. And now we can once again enjoy the aroma of roasting Chile!

Recently received and used this Small Table Top Roaster and roasted some Red Hatch Chilis. The roaster worked well. I will advise that it may be good to sort the Chilis by size and roast them by size. I found that I over-roasted the smaller chilis while the larger ones were perfect.

I have to move to another state and I am worried about getting my Chile fix. So, i ordered this. We haven’t roasted anything in it yet because we are moving, but we did test it and it works really well. I love it.

We have ordered other roasters in the past and from other companies but this roaster is by far the best we have received, the quality of the way it is built to the regulator!! We will never go anywhere else!!

High quality product makes the roasting process a breeze. Was able to grille our 25 pound chile box in about 15 minutes vs the 2 or 3 hours it use to take with a regular grill. It is expensive but well worth it. I considered purchasing a cheaper option from amazon but the reviews stated those cheaper roasters did not deliver a high heat flame and left a sooty residue. Not the case with this one, it's basically a table top flame thrower! I highly recommend this made in the USA product!

I was looking for a roaster that would work. I have been using my grill for years but I would lose so much between the grate. I looked at plans to make one but for the cost just could not beat this one. Best thing is it works great!

My medium roaster arrived in perfect condition. I can't wait to try it out when my yearly supply of Sandia's arrive in a couple of months. I order between 25 and 50 pounds every year and have wanted a roaster for a long, long time. It takes me back to the 12 years I lived in Albuquerque when I had my chiles roasted in one of the industrial sized roasters.

I ordered this roaster because we live in Colorado and went to the Chili festival in Pueblo for the second year and purchased 2 bushels of peppers. I wanted to roast faster then my grill would plus I can roast more at a time. I am very happy with the roaster and look forward to roasting more peppers and other veggies.

Very easy set up. Very easy to use. Amazing end results! I highly recommend the small table top roaster. We used to do ours in the oven or use a kitchen hand burner. This is SO much easier and less messy and roasts the peppers just perfectly.

I bought the small one for my husband and me. We absolutely love it. Roasted chili’s in the evening with a cocktail and north breeze. I’ve bragged about it so much, I need two for Christmas gifts. Please let me know when you have more in stock.

We know you're wondering.

Hatch Chile is a protected regional designation — like Champagne or Vidalia onions — for chile grown exclusively in the Hatch Valley of southern New Mexico. The valley's mineral-rich Rio Grande soil, 300+ days of intense sunshine, and 40-degree temperature swings between day and night produce 23% more flavor compounds than chile grown elsewhere. Most "green chile" in grocery stores is Anaheim — a milder, less complex pepper mass-produced in California or Mexico. All of our products are Hatch Chile Association certified, meaning they were grown in the Hatch Valley, not relabeled from another region.

All frozen products ship Tuesdays and Wednesdays in insulated, recyclable containers packed with dry ice. We ship from distribution centers in both New Jersey and California so ground shipping reaches most U.S. addresses in 1–5 business days — no matter where you live. Overnight shipping is available during warmer months. Fresh chile (available July–October) ships same-day on Wednesdays, arriving within 24 hours of harvest.

Medium is our most popular heat level and what we recommend for first-timers — it has a pleasant, building warmth that lets you taste the signature smoky-sweet Hatch flavor without overwhelming heat. Mild is perfect for kids, spice-sensitive palates, or dishes like rellenos where you want flavor without the kick. Hot delivers the classic New Mexican heat that restaurants in Albuquerque and Santa Fe are known for. X-Hot is for serious heat seekers only. When in doubt, start Medium — you can always go hotter next time.

Roasted frozen Hatch chile lasts 12+ months at 0°F without significant quality loss — this is how most New Mexicans stockpile their annual supply and enjoy Hatch chile year-round. We recommend portioning into meal-sized bags and pressing out as much air as possible before freezing. Our jarred sauces, salsas, and dried products like red chile pods and powders are shelf-stable for 12–18 months in your pantry.

For frozen products like roasted chile, rellenos, tamales, and chimichangas: 2 items saves 20%, 3 saves 25%, and 4+ saves 30%. Mix and match anything within each collection — the more you stock, the more you save.

Every product we sell is Hatch Chile Association certified — your guarantee that the chile was grown in the Hatch Valley of New Mexico, not Anaheim or imported chile relabeled under the Hatch name. Our family has farmed the Hatch Valley since 1917 when our great-great-grandfather Joseph Franzoy became the first commercial chile farmer in the region. Five generations later, we still farm 300+ acres and grow 10+ cultivar varieties including Big Jim, Sandia Select, and Lumbre. Pair it with our handmade green chile rellenostraditional tamales, or jarred sauces and salsas for a complete Hatch Valley pantry.
