My old tamale supplier went out of business so I was looking around and found these. Familiar with Hatch products so I though it was worth a try. They are very good and now I have a new tamale supplier.

I somehow wound up in Delaware. Mexican restaurants here are in no way, as tasteful of Mexican food of the West. So when I bought some green chile to make my own chile, I noticed your tamales. They sure are so good!!!

My experience with bought tamales is they may be good but are rarely great. These were great. My wife is a very picky tamale aficionado and she loved them too. We made homemade green salsa to go with them and they were excellent. Thanks.
Jay D · Verified
Loved them. Really appreciate that they were made with chicken breast. Made our own green salsa to go with them and they tasted homemade.
Jay D · Verified
We tried all the tamales and all were excellent but if forced to choose the red pork tamales were the best. We made our own green salsa for the green chile and chicken tamales. The red pork needed nothing. They were perfect with nothing. Truly tasted like the best homemade tamales. I’d be proud to recommend these to the most discriminating tamale lover.

The traditional tamales are very good. They have alot more flavor and the corn masa is so tender. I will buy again.

Have already "burned" through this order. I enjoy these for breakfast, but naturally they're good anytime. Very nice blend of red chile and pork. Keep up the great work!!

I love tamales and living here in MA it is hard to find. I have to give my son in law your site. He is native New Englad but loves spicy food. I will order them again.

Delicious tamales. We are a family of three so I placed the one dozen package on end in water to thaw just 6 and re-froze the rest for another meal. Had them with fried plantains. Muy sabroso.

Lovely light masa and good ratio of filling to dough. Tasty.

Frequently Asked Questions

What are the tamale varieties you carry?
We carry three: Red Chile Pork, Green Chile Chicken, and Green Chile Cheese. All are made at our New Mexico facility using real Hatch chile.
Can I mail-order tamales, and how does shipping work?
Yes. We mail-order New Mexican tamales nationwide, shipped frozen in insulated packaging with dry ice so they arrive cold. Order by the dozen, keep them frozen, and reheat in minutes — handmade with real Hatch chile, the same way since 1978.
How do I reheat frozen tamales?
The four best methods are steamer (20–25 min), oven at 325°F wrapped in foil (20–25 min), microwave wrapped in a damp paper towel (2–3 min per tamale), or air fryer at 350°F (10–12 min). Do not thaw before reheating — cook directly from frozen for best texture. Full instructions at our tamale reheating guide.
Are these tamales made in New Mexico?
Yes. They are produced at our New Mexico facility — a facility that has been making New Mexican-style tamales since 1978. The Hatch chile filling comes from the Hatch Valley.
How spicy are they?
The Green Chile varieties are mild to medium — the Hatch chile flavor is present but accessible for most heat tolerances. The Red Chile Pork tends to be slightly richer and earthier in heat. None of these are extreme-heat products.
Can I order tamales as a gift?
Yes. Tamales ship frozen with dry ice and hold well in transit. They are a popular holiday gift for anyone with ties to New Mexico or who appreciates authentic regional food.
Do the tamales contain gluten?
Tamale masa is traditionally made with masa harina (ground hominy), which is gluten-free. However, our tamales are produced in a facility that also handles other ingredients — if you have a severe gluten sensitivity, check the product label or contact us before ordering.

The Complete Guide to New Mexican Tamales

Hatch Chile Tamales — Handmade in Southern New Mexico

Authentic New Mexican tamales made with 100% Certified Hatch Chile, shipped frozen nationwide.

Our tamales are handmade in small batches using an authentic New Mexican recipe passed down through generations of Hatch Valley families. Fluffy masa made with stone-ground maseca is stuffed with real Hatch Chile — not generic "green chiles" — and your choice of shredded chicken, seasoned pork, or melty cheese. Each tamale is steamed to perfection and flash-frozen so it arrives at your door tasting like it came straight from a New Mexico kitchen.

Whether you're a homesick New Mexican craving a taste of home, a first-timer curious about authentic Southwest cuisine, or stocking up for a holiday tamalada, our tamales deliver the real thing. Packaged in bags of 12, they're easy to heat and serve any night of the week. Pair them with our green chile stew or top them with our Hatch chile salsas for a complete New Mexican meal.

Which Tamale Is Right for You?

All three are made with the same fluffy stone-ground masa. The difference is what's inside.

🔴 Hatch Red Chile Pork

The classic. Tender shredded pork drenched in a Hatch Red Chile sauce that's earthy, smoky, and rich. This is the tamale you'll find at every New Mexican Christmas dinner and the one most people think of when they hear "tamale." If you've never tried a New Mexican tamale, start here.

🟢 Hatch Green Chile Chicken

The iconic New Mexican flavor combination: roasted Hatch Green Chile and shredded chicken. Brighter and more forward in heat than the red chile pork, with that unmistakable smoky-sweet green chile flavor. A favorite among customers who love green chile on everything — enchiladas, burritos, burgers, and now tamales.

🧀 Hatch Green Chile & Cheese

Inspired by our popular Hatch Chile Rellenos, these tamales are stuffed with melty cheese and roasted Hatch Green Chile. The cheese mellows the heat just enough to make these the most approachable option — and the one kids tend to reach for first. Great as a side dish or a lighter meal.

What Makes New Mexican Tamales Different?

Not all tamales are the same. Traditional Mexican tamales are typically wrapped in corn husks (hojas) or banana leaves and feature fillings seasoned with dried chiles like guajillo and ancho. New Mexican tamales share that heritage but put their own spin on it — the star ingredient is always Hatch Chile, which adds a roasted, smoky sweetness you won't find in tamales from other regions.

Our tamales are wrapped in paper casings rather than traditional corn husks, which makes them easier to unwrap and serve. The masa is made with stone-ground maseca for a lighter, fluffier texture that lets the chile flavor come through. And because we use 100% Certified Hatch Chile — grown in the Hatch Valley of Southern New Mexico — every bite carries that specific terroir: the mineral-rich soil, the Rio Grande water, and the high-desert sun that make Hatch Chile unlike any other chile in the world.

Lard, Vegetarian Status, and Allergens

Our tamales are made from a short, recognizable list: stone-ground corn masa, 100% Hatch chile, and either shredded chicken, seasoned pork, or cheese. The masa is built with vegetable shortening rather than lard, so our Green Chile Cheese tamale is vegetarian-friendly. None of the three varieties are vegan.

Every variety contains corn; the cheese variety contains dairy. Our tamales are produced in a facility that also handles wheat, so while the masa itself is naturally gluten-free, we can't guarantee zero trace gluten. They do not contain peanuts, tree nuts, soy, or shellfish.

Full ingredient lists, allergen statements, and per-tamale nutrition facts (calories, sodium, fat, protein) live on each individual product page — pull up the specific tamale you're considering for the exact numbers.

How to Heat Our Tamales

Our tamales arrive frozen and ready to heat. Defrost in the microwave (45 seconds per tamale) to start, then finish with one of these methods.

Steamer

Fill steamer with water. Keep tamales in their paper wrapping. Steam over medium heat.

🔥

Oven

Preheat to 325°F. Wrap each tamale in aluminum foil, removing all air. Turn halfway through.

15–20 min

Instant Pot

Heat Instant Pot on high. Dampen tamales and space them out for even cooking.

~10 min
📡

Microwave

Wrap in a damp paper towel. Place on a plate with space between. Quick but may dry edges.

1–2 min

For frozen tamales, add 10 minutes to steamer/oven times. Full instructions for all products on our Preparation Instructions page.

What to Serve with Tamales

Tamales are a meal on their own, but these pairings turn them into a feast.

🍲 Hatch Green Chile Stew

The classic New Mexican pairing — especially during the holidays. Ladle our Hatch Green Chile Stew alongside your tamales for a complete traditional meal. The stew's brothy, potato-studded warmth is the perfect complement to the rich masa.

🌶️ Smother Them

Unwrap your tamales, plate them, and smother with our Hatch chile sauces or salsas. Red sauce on the pork tamales, green sauce on the chicken — or go "Christmas style" and pour both. Top with shredded cheese and a dollop of sour cream.

🥗 Keep It Simple

Serve with rice, refried beans, and a side of pico de gallo or guacamole. For a lighter pairing, a crisp green salad with lime vinaigrette cuts through the richness of the masa. Don't forget the hot sauce on the table.
