The Story Behind the Switch
For years, we carried Fresh Chile Co.'s red chile sauce because it shared our passion for real Hatch chile. But we always wanted to go further: to put our own family's recipe in the jar instead of someone else's.
Now we have. Hatch Fresh Red Chile Sauce is made in our own facility, to the recipe our family has enjoyed around our own table for years: fresh Hatch red chile and simple seasonings, with garlic, cumin, and oregano, lightly thickened with rice flour so it pours straight from the jar, ready to use. Theirs is a plain, honest puree. Ours arrives already seasoned.
We're 5th generation descendants of Joseph Franzoy, credited as the first commercial chile farmer in Hatch, New Mexico, and our family has grown chile in the Hatch Valley since the beginning. That heritage shaped the recipe you're tasting here. Pour it over chicken, beef, or pork enchiladas, simmer pork in it for carne adovada, or spoon it over eggs, and you'll taste why we finally put our own name on the jar.
