How does the chile arrive? Will it still be frozen?
We ship on dry ice every Tuesday and Wednesday. Most orders arrive within 2–3 business days, frozen solid. The insulated packaging keeps everything at safe temperatures throughout transit. If anything arrives thawed, contact us — we'll make it right.
Can I refreeze after thawing?
Yes. Thaw what you need in the fridge overnight, and refreeze the rest. Quality stays excellent for up to 12 months in the freezer. Each pack is about one meal's worth, so you shouldn't need to refreeze often.
What's the difference between Mild, Medium, Hot, and X-Hot?
Mild (~0–2,000 SHU): Classic Hatch flavor with minimal heat. Great for queso, eggs, and kids.
Medium (~2,000–7,000 SHU; Big Jim ~6,500 per NMSU CR706): Our most popular. Noticeable kick without overwhelming.
Hot (~7,000–11,000 SHU): Real heat that builds. For spice lovers.
X-Hot (~11,000+ SHU): For people who grew up on chile.

Our chile is flame-roasted Hatch Valley green chile — a completely different cultivar, growing region, and processing method. Do you ship year-round?
Yes. Our roasted chile is flash-frozen at harvest and available 365 days a year. Fresh (unroasted) chile is seasonal — available only during harvest from July through October. Learn about fresh chile →
