These buttery shortbread cookies deliver a delicate sweetness that pairs beautifully with the bright, savory notes of Hatch green chile jam. It's a uniquely New Mexican twist on a classic treat — the kind of recipe that brings together family traditions and celebrates our beloved Hatch chile harvest season.

You know that feeling when you bite into something and it just takes you back home? That's exactly what these shortbread cookies with Hatch green chile jam do for us. Growing up in a five-generation farming family here in New Mexico, we've always believed that the best recipes tell a story — and this one definitely tells ours.

Laura created this recipe as a way to honor our Hatch chile heritage while celebrating the simple elegance of a classic shortbread. The buttery, tender cookies are studded with roasted Hatch green chiles, and when you sandwich them together with that tangy-sweet jam, something magical happens. It's unexpected, it's delicious, and it's unmistakably New Mexican. Want that flavor without the canning step? A pinch of Hatch green chile powder in the dough deepens the chile note beautifully.

These cookies are perfect for sharing with family, bringing to gatherings, or just enjoying with a cup of coffee on a quiet afternoon. Every bite reminds us why we're so proud of our Hatch chile legacy and why tradition matters so much in our kitchen.

Ingredients

Instructions

  1. Shortbread: Using an electric mixer and a medium bowl, beat butter, granulated sugar, brown sugar, and vanilla on medium-high speed until light and fluffy, 3 to 5 minutes.
  2. With the mixer on low speed, slowly add flour, followed by Hatch Green Chiles and beat just to blend.
  3. Using a large piece of plastic wrap to cover dough, use your hands to form the dough into a log shape that is 2 to 2¼ inches in diameter. Chill until firm, about 2 hours.
  4. Preheat oven to 350°F. Line a rimmed baking sheet. Brush outside of logs with egg wash and roll log in Demerara sugar.
  5. Slice each log into 1/4-inch-thick rounds. Arrange on prepared baking sheet about 1 inch apart and sprinkle with sea salt. Bake until edges are beginning to brown, 12 to 15 minutes. Let cool before making your jam sandwiches.
  6. Once cookies are cool, place a scoop of jam between two cookies. Gently press cookies together, allowing jam to spread to the edge.
  7. Jam: Add the Hatch Green Chiles to a large pot.
  8. Stir in the vinegar, salt, and sugar. Bring the mixture to a boil for 10 minutes, stirring often.
  9. Add the liquid pectin and boil for 1 more minute.
  10. Remove the pot from the heat. Pour the jam to within 1/4-inch of the top of clean mason jars and allow to cool on the counter.

Frequently asked questions

What are Hatch green chile shortbread cookies?
They're buttery, tender shortbread cookies studded with roasted Hatch green chile, then sandwiched together with a sweet-savory Hatch green chile jam. The result is a uniquely New Mexican dessert — delicate and sweet from the shortbread, bright and lightly spicy from the chile and jam. A creative way to celebrate chile harvest season.
Can I make the green chile jam ahead of time?
Yes, and you should. The Hatch green chile jam can be made days or even weeks ahead and stored in clean sealed jars in the refrigerator. Making it in advance also means it's fully cooled and set when you're ready to sandwich the cookies, so it spreads cleanly without running out the edges.
Why chill the shortbread dough before baking?
Chilling the dough log for about two hours firms up the butter so the cookies hold their shape and slice cleanly into neat rounds. Cold dough also bakes up more tender and less likely to spread, giving you that classic crisp-edged, melt-in-your-mouth shortbread texture studded evenly with green chile.
Where can I buy Hatch green chile for these cookies?
The Hatch Chile Store ships roasted Hatch green chile and Hatch green chile powder from our family farms in the Hatch Valley of New Mexico. Use roasted chile for the jam and dough, or stir a little green chile powder into the dough for an easy, shelf-stable way to add chile flavor.
