Sauce is delicious as expected. Five stars for sauce quality First box arrived with all jars smashed. Hatch Chile responded immediately and replaced the jars quickly. Second box was very well packaged.Josephine P · Verified
Posole is the slow-cooked New Mexican stew built on three things: hominy, real Hatch red chile, and time. It's the dish that anchors holiday tables across New Mexico — Christmas Eve, Día de los Reyes, family gatherings any Sunday — and the version that gets handed down is always made from scratch.
This collection is everything you need to make posole at home the right way: hominy, Hatch red chile sauces (sun-dried and fresh), and our family Posole Seasoning blend. No cans of generic chili powder, no shortcuts — just the building blocks for the posole your abuela would recognize.

This was the first time I tried your hot sauce. OMG it was really tasty. The right amount of ingredients and mixture hit a high 9 for me. I used it on a plate of roasted chicken the first night. It was wonderful. I recommend you buy it. It was worth the wait . ThanksErnesto R · Verified
It was mild enough my wife could eat it. She loves chili but meds she's on she can't stand any heat. Flavor was great. You can tell it is fresh by the bright red color not like a lot of chili that has been run through a drier.Stanley D · Verified
I grew up in New Mexico and had access to fresh hominy. Since moving to Texas the only hominy I could find was canned hominy. Canned hominy is over processed and tastes bland. I was enthusiastic to discover fried hominy for my posole. I followed the instructions for cooking dry hominy and was delighted to discover the taste of the fresh hominy I was accustomed to.Rosemary T · Verified

It's very delicious and its served well in our tamale recipe and we had enough to season other foods/dishes...add salt is the only "bad" thing I can say. A little thinner.Emilia H · Verified
So I was very excited to try this, and when it finally came i tried it, and at first I was disappointed, but the more I ate and ate with food, the better it tasted. Slightly different than what I was used to. But still good.Brian F · Verified
This is my favorite product. While I do make my own Red Chile with their chile pods, I can't get to this smoothness/consistency of the jarred version. Ten stars!Jennifer B · Verified
Nice brilliant red color means its fresh of this years crop. When we got the xtra Hot its mean xtra hot! Great taste and service. ThanksTony C · Verified
Our son and his family moved to Seattle, WA. They reall missed the New Mexico Chili. The Fred Meyers store finally started stocking the 505 green chili, but still no red. Sent them 4 jars of the medium red. They loved it, but a bit to hot LOL, so my next order will be mild. The chile was so delicious. Hopefully the red chili will be in their neck of the woods sooner than later. Great product!!!Joe L · Verified

After living in NM and having the pork adovado, I have been trying to duplicate for years. With this sauce, I am pretty sure I can do it. The taste is right. Glad I got only the mild which is spicy enough for me.Vicki L · Verified
It’s good but I didn’t realize l was ordering sauce. I really wanted to try the chunky green stuff. I’m not sure those to use this sauce.Charles B · Verified

Hatch Chile always come fresh and delicious. Being a NM native and far away from the chile fields now living in OR, ordering directly from Hatch and still having that warm flavor from home is a godsend! We love using this red chile in our posole, tamales, carne adovada, etc. Thank you for having such delicious products! :)John R · Verified

I've been getting my green chili from this store for a long long time. I've recently tried the sun-dried hatch red chili sauce. I'm a big fan of red chili and this is just delicious. I'm in California and we just have no chili sauce available that comes even close to this. I also have to comment on this company's absolutely excellent customer service. Anytime I've had a question or needed anything and actual human being gets back to me very quickly.Art Z · Verified

The red Chile sauce has multi use in our house. Pork and gravy, burritos and tamales. It’s also one of my favorites.Carlos C · Verified
Actually surprised at the very nice taste. Did you use blenders or ricers for the making of the sauce? My parents were from Rodey.Conrad J · Verified

Hatch Chile is a protected regional designation — like Champagne or Vidalia onions — for chile grown exclusively in the Hatch Valley of southern New Mexico. The valley's mineral-rich Rio Grande soil, 300+ days of intense sunshine, and 40-degree temperature swings between day and night produce 23% more flavor compounds than chile grown elsewhere. Most "green chile" in grocery stores is Anaheim — a milder, less complex pepper mass-produced in California or Mexico. All of our products are Hatch Chile Association certified, meaning they were grown in the Hatch Valley, not relabeled from another region.
All frozen products ship Tuesdays and Wednesdays in insulated, recyclable containers packed with dry ice. We ship from distribution centers in both New Jersey and California so ground shipping reaches most U.S. addresses in 1–5 business days — no matter where you live. Overnight shipping is available during warmer months. Fresh chile (available July–October) ships same-day on Wednesdays, arriving within 24 hours of harvest.
Medium is our most popular heat level and what we recommend for first-timers — it has a pleasant, building warmth that lets you taste the signature smoky-sweet Hatch flavor without overwhelming heat. Mild is perfect for kids, spice-sensitive palates, or dishes like rellenos where you want flavor without the kick. Hot delivers the classic New Mexican heat that restaurants in Albuquerque and Santa Fe are known for. X-Hot is for serious heat seekers only. When in doubt, start Medium — you can always go hotter next time.
Roasted frozen Hatch chile lasts 12+ months at 0°F without significant quality loss — this is how most New Mexicans stockpile their annual supply and enjoy Hatch chile year-round. We recommend portioning into meal-sized bags and pressing out as much air as possible before freezing. Our jarred sauces, salsas, and dried products like red chile pods and powders are shelf-stable for 12–18 months in your pantry.

Every product we sell is Hatch Chile Association certified — your guarantee that the chile was grown in the Hatch Valley of New Mexico, not Anaheim or imported chile relabeled under the Hatch name. Our family has farmed the Hatch Valley since 1917 when our great-great-grandfather Joseph Franzoy became the first commercial chile farmer in the region. Five generations later, we still farm 300+ acres and grow 10+ cultivar varieties including Big Jim, Sandia Select, and Lumbre. Over 500,000 customers and 12,000+ verified 5-star reviews — you're buying from the source.
These are the products our 500,000+ customers come back for again and again. Our flame-roasted frozen Hatch chile is by far the most popular — flash-frozen within hours of roasting to lock in the same smoky, earthy flavor you'd taste standing next to a roasting drum in Hatch during chile season. Pair it with our handmade green chile rellenos, traditional tamales, or jarred sauces and salsas for a complete Hatch Valley pantry.
