Most canned "green chile" is Anaheim pepper grown in California or Mexico, packed in vinegar brine for shelf life. Our Hatch green chile is a different pepper entirely, grown on our family farm in the Hatch Valley of New Mexico and flame-roasted the traditional way. No brine, no vinegar, no preservatives. We've been farming chile here for five generations, since 1917. The Hatch Chile Association certifies our product as authentic Hatch Valley grown.

Chopped is the easier pick for most recipes. Use it in green chile cheeseburgers, breakfast burritos, eggs, queso, green chile stew, soups, and mac and cheese. Whole is what you want for chile rellenos, layered enchiladas, or sandwiches where you want a full roasted pepper. If you're not sure, go with chopped.
Each box is 5 lbs (five 1 lb vacuum-sealed bags). That's roughly 10 to 15 meals depending on how heavy you pour.
