Hatch chile corn tortillas are real corn tortillas — masa, water, lime, and our own Hatch chile blended into the dough before pressing. Not flavored, not seasoned after the fact: the chile is IN the corn. Made fresh at Amigo's Mexican Foods in Deming, NM (our USDA-inspected New Mexican kitchen since 1978), then flash-frozen so they arrive ready to heat and eat.

Use them anywhere you'd use plain corn tortillas — enchiladas, tacos, tostadas, chilaquiles, tortilla soup — but with a layer of Hatch chile flavor and color that elevates the whole dish. Red Chile Corn Tortillas have a deep brick-red hue from dried Hatch red chile; Green Chile Corn Tortillas have a green flecked appearance from roasted Hatch green chile. Both are gluten-free (corn-based) and freezer-stable.

Are the chile tortillas spicy?
Mild. The chile is for flavor and color, not heat — both red and green versions are family-friendly. If you want spicy tortillas, dust them with our Hatch chile powder before serving.
Are they gluten-free?
Yes. Both our Red and Green Chile Corn Tortillas are made from corn masa (no wheat) and are naturally gluten-free. Cross-contamination risk is minimal — they're made on a dedicated corn-tortilla line at our Deming facility.
How do I heat them?
Three options: (1) DRY SKILLET — heat 30 seconds per side over medium-high; the most authentic way. (2) MICROWAVE — wrap a stack in a damp paper towel and microwave 30–45 seconds. (3) OVEN — wrap a stack in foil and warm at 350°F for 8–10 minutes. Pull from frozen — no thawing needed; just add 30 seconds to whatever method.
How long do they keep?
Frozen: 6+ months at 0°F in their sealed packaging. Once thawed, refrigerate and use within 5–7 days. Do not refreeze fully-thawed tortillas — they'll crumble.
What's the best way to use them?
ENCHILADAS — dip in warm chile sauce, fill with cheese or chicken, roll, bake. TACOS — heat in dry skillet, fold around grilled fish or carnitas. CHILAQUILES — fry cut tortillas crispy, simmer briefly in red or green chile sauce. Eggs and beans, breakfast tacos, tortilla soup — anywhere you'd use plain corn tortillas, just better.
