I ive in San Antonio, TX but I am originally from Truth or Consequences, nm a short distance from Hatch. The chili is exactly as advertised and arrived on schedule. Every August I order 25 lbs to keep me from Chile withdrawal !! Best company in the business. Jerry Scott

Box arrived and only one chili had any amount of red. We roasted them on the grill, put ‘em in a pan with lid, waited a bit, then peeled, bagged, and froze. But, not without trying some with a bit of cheese. That taste test went super well. Met our idea for medium hot.
Looking forward to Relleno casserole.
The smell of roasting chili reminds us of our early marriage years in Dona Anna county and biking from Nutt to Hatch.
Thanks.

These are the perfect flavor for those who are a little scared of "spicy". Or if your stomach can't handle "hot" stuff any more. They have enough of a nip so you know its green chile, and all the flavor of the green chile.

I love this company and their chile! My order arrived in perfect condition and I've been enjoying the chile ever since. If you really like a spicy chile, this year you might want to go for the hottest variety offered. Of course every season is different and the spiciness is to some extent unpredictable, but I wish that the Big Jims were a little hotter. This is just personal preference, of course. But I ordered the medium-hot in part because my guests don't always like as much heat as I do. Anyway you can't go wrong because the quality of the product and the company's service are fantastic.

These are incredible. Deep earthy flavor, spicy, flavorful, excellent. Love these in Chile Verde, over eggs or with brats. The delivery company delivered these a day late, creating more than average spoilage. They made it right and very quickly, providing more than expected. Great customer service, I am Hatch Chile Store for life.

These chiles are excellent! But I want to compliment the company for their excellent packaging too. The first time I ordered from this store 2 years ago they used frozen gel packs. The chiles arrived almost room temperature. The gel packs just didn't last long enough. Refreezing them did not ruin them however and they turned out to be very good. I notified the Hatch Chile Store of the packaging problem. I am happy to say that they took notice, and this year's order arrived hard frozen packed in dry ice. More than enough dry ice was included. Good Job People ! I will recommend The Hatch Chile Store to anyone.

Great product, great service. We've already had some stew and suffed, and the rest are in the freezer. We here in Wisconsin have a local grower who offerers an acceptable option. But they're smaller and, well, not the real thing. I'll be ordering from you again next year.

Flavor is often imitated but CANNOT be equaled! Our Big Jims arrived in Seattle, WA well packaged to prevent loss/damage. The peppers were in excellent condition, firm, green, unwilted. And the aroma!. Salivating we processed some immediately for dining pleasure that evening. The rest are in the freezer to be rationed out this winter. Regret we don't have a bigger freezer

Things that my kids (30-somethings) like best about Big Jim Chile are the size... great for stuffing if they choose... and the range of heat from one fruit to the next. They are real adventurers in the mountains of Montana, so Big Jim suits them just fine!

I gave these as a gift, as I have purchased them several times in the past, and I know what a special box would be opened. My friend was thrilled and couldn’t wait to start roasting and sampling. These are the most beautiful chili’s I have ever seen.

Was a little disappointed in the the spice level. Was not hot at all. But I did like the way it came packaged. Probably won't order this box again. For the price and not happy with the hot level.

ALL Hatch chilies are awesome! We went with Big Jim as it's a medium hot. The mediums we got last year were really benign. Our Big Jims are pretty mild, but still add all of the flavor we crave. Next year we will get the hot as we like heat in our dishes, but not so much as to over-power the great taste Hatch chilies possess.

I was born and raised in Albuquerque New Mexico, I just recently moved to Austin Texas. They sell green chili here by the singles but it’s nothing like New Mexico chili. I didn’t want to miss out so I’m soooooo great full you deliver. Now I can show these Texans what chili is all about and they can start ordering it to. Your awesome

We were so excited to receive our chile last week! We ordered them fresh so that we could roast some and make hot sauce out of some of the fresh ones. We tried the hot sauce (simple vinegar, chile and garlic) last night on pizza and it was fantastic! The chiles have the right amount of heat for us--spicy, but not so much that we can't enjoy the tasty Hatch flavor. We'll be ordering again!

Superb taste. May I still order some more? The Big Jim. I roast it then blend it with onions and tomatoes and salt and pepper and there you go. It’s very hot but very good. Great on hamburgers, great with nachos. Thanks again. Let me know if I can get some more.

I ordered 5lbs. Approximately 10 of the chilies in the box were soft/rotten and had to be thrown away. Not a huge deal, but I hadn't experienced that from any chilies I've gotten from you before.
