  • Mild0–2,000 SHUJoe Parker, 1904, Machete. Gentle warmth — great for newcomers, kids, and rellenos.
  • Medium2,000–7,000 SHUBig Jim or Charger (Charger is replacing Big Jim). Our most popular tier — noticeable but not overwhelming.
  • Hot7,000–11,000 SHUSandia Select (~9,500 SHU). Real chile-head heat — green chile stew and sauces.
  • X-Hot11,000+ SHULumbre and Miss June; Barker occasionally. Varies year to year. Spike sauces and salsas.
