A New Mexican Thanksgiving

Tamales: Cook directly from frozen to 160°F, leaving the parchment paper on while heating (remove it before eating). Steam for 30–40 minutes in a steamer basket over simmering water for the best texture. Or wrap 2 frozen tamales in a damp paper towel and microwave on high for 2 minutes. Or heat at 350°F for 25–30 minutes, covered with foil.

Chimichangas: Keep frozen until ready to heat. Heat from frozen until the center reaches 165°F: oven at 400°F for 20–25 minutes, or air fryer at 380°F for 12–15 minutes, turning once.

Rellenos: Defrost 30 seconds in the microwave, then pan fry in oil over medium heat for 7–10 minutes, turning occasionally. Or deep fry at 375°F for 4 minutes, until golden brown all over. Or air fry 3 at a time at 400°F for 9 minutes with no oil, flipping halfway through.

We ship frozen items Tuesdays and Wednesdays only, so your box never sits in a shipping warehouse and thaws over the weekend. Order by 2 AM Mountain Time on a ship day and it goes out that day. After that it catches the next one.

Frozen items arrive cold or we reship the affected items free. Cold and firm counts as frozen: if it's still icy, firm and cold, it's fine to use or refreeze. If it has reached room temperature, don't eat or refreeze it.

If anything shows up warm, send us photos of the box and the product within 4 hours of the carrier's delivery scan; if it arrives cold but crushed or split, within 24 hours. We'll make it right.
