Instructions
- Preheat oven to 350°F.
- Bake bacon for 15 to 17 minutes until crispy. Drain on a paper towel and cut into strips. Set aside.
- Without separating the rolls, slice the entire package horizontally in half. Place the bottom half of the rolls on a cookie sheet with sides or a jelly roll pan.
- In a large skillet, cook ground beef with garlic powder, onion powder, salt, and pepper over medium heat until no longer pink. Drain excess fat.
- Layer the ingredients in the following order over the bottom half of the rolls: half of the cheddar cheese slices, bacon strips, Roasted Hatch Green Chile strips, seasoned ground beef, and remaining cheddar cheese. Place the top half of the rolls over the layers.
- In a small bowl, combine melted butter, brown sugar, Worcestershire sauce, and stone ground mustard. Spoon the glaze evenly over the tops of the rolls.
- Cover with foil and bake for 20 to 25 minutes until the cheese is melted and the rolls are heated through.
- Remove from oven, uncover, and slice into individual sliders along the roll lines. Serve immediately.

Frequently asked questions
What is a Hatch green chili burger?
A Hatch green chili burger is a New Mexico classic: a beef patty topped with fire-roasted Hatch green chile and melted cheese, so the cheese locks the chile onto the burger. It's so iconic the state has an official Green Chile Cheeseburger Trail. This slider version layers the same flavors on Hawaiian rolls to feed a crowd from one pan.
What chile goes on a Hatch green chili burger?
Fire-roasted Hatch green chile is the standard. Layer roasted, peeled Hatch chile under or over the cheese so it melts in. Choose medium for flavor or hot for more bite. Jarred, frozen, or freshly roasted Hatch chile all work; just avoid canned chile, which is watery and flat next to the real thing.
How many sliders does this recipe make?
This recipe makes 24 sliders from one full package of Hawaiian sweet rolls, baked together on a single sheet pan. It's built to feed a crowd at a game day, cookout, or family gathering. The sliders go fast, so if you're serving a big group, plan on making two pans.
Where can I buy Hatch green chile for these sliders?
You can order fire-roasted Hatch green chile shipped from our family farm in the Hatch Valley. Our Roasted Hatch Green Chile is fire-roasted and peeled, ready to layer onto the rolls. During harvest season, Fresh Hatch Green Chile is available to roast yourself for that just-off-the-grill flavor.
