The green chile cheeseburger is New Mexico's official state burger — and arguably its greatest contribution to American food culture. Born at San Antonio NM's Owl Bar in the 1940s, it's just a smashed-patty cheeseburger crowned with chopped roasted Hatch green chile — but the chile makes everything. Once you've had a real one, every other burger feels naked.

This collection is everything you need to build a green chile cheeseburger at home: roasted Hatch green chile (frozen or fresh in season), Hatch green chile sauce, chile-infused powders for rubs, and bundles that get you everything in one order. Throw the cheese and the patty yourself — we'll handle the chile.

Frequently Asked Questions

What makes a green chile cheeseburger different from a regular burger?
It's a smashed-patty cheeseburger crowned with chopped roasted Hatch green chile. The chile melts into the cheese, adds smokiness, and gives the burger a layer of flavor that bare beef and cheese can't reach. Once you've had a real one, regular burgers feel flat.
What kind of green chile should I use?
Roasted Hatch green chile — frozen (year-round) or fresh (Aug–Oct). Avoid 'green chile' from generic spice aisles or jars labeled 'hatch-style' — they're typically not actual Hatch chile. For best texture, chop the chile to a rough mince so it sits evenly on the patty.
How much green chile per burger?
About 2 tablespoons of chopped roasted chile per burger — roughly half a 1-pound bag stretches across 8 burgers. More if you like it chile-forward.
Can I make it ahead?
The chile can be thawed and chopped a day ahead and refrigerated. Cook the patties fresh — the burger should be hot when the chile and cheese hit it for the cheese to melt properly.
Cheese — what's traditional?
Sharp cheddar or pepper jack are classic in New Mexico. Some places use American (Owl Bar in San Antonio NM uses American, the originator). Avoid 'fancy' cheeses (gruyere, brie, etc.) — they fight the chile flavor.

Why 500,000+ Customers Keep Coming Back

Absolutely delicious. My brother in law is the one who sent me my first jar. I was hooked.

I lived in the southwest U.S. for 20 years and during my time in the region I immediately fell in love with pork green chile stew. I moved back to the midwest a couple of years ago and well these fine folks don't know jack about Hatch chiles. Being able to order them from your farm and make my own green chile stew at home has been fantastic! You all bring the flavor!!

The chili i get from. Chili store is always good and fresh. I recommended to everybody red and green

Astounding! I absolutely can't believe the night and day difference between this product and the lackluster flavor of what I have been buying in cans from my grocery. I wasn't prepared for the smoky intensity of these freshly roasted jarred chilies. Honestly, a spoonful tossed with some cheese and ranchero sauce in a tortilla could turn me vegetarian. And wait until you top a burger with it!

Love these! We always have them on hand in the freezer for all sorts of dishes!

My order arrived on Tuesday and on Wednesday, i made Mexican Lasagna and Chicken Chorizo/Vegetable soup. I will take both dishes to my eye doctors office. One of the staff members is planning a trip to NM in May...including Hatch and White Sands. I used the pure green chili...medium.A nice bite and fair on the kick. Recipes from Southwest cookbooks.

I live an hour north of Pueblo, CO. I know my fellow Coloradians will disown me for this review, but damn this chili is legit. Not to mention this company makes sure you are happy. My chili showed up thawed out due to a UPS delay. They reached out to me and sent a replacement order immediately. Chili great. Customer service even better!

Always enjoy whatever I order from Hatch. It is the best Chile I've ever tasted. Things are a little pricey, but worth every penny. I tell everyone about Hatch.

We can't imagine how we ever went without a jar of these chiles in our pantry. We use them on eggs, hamburgers, in meatloaf, tacos, nachos....everything but on our breakfast cereal! Wonderful flavor.

Great chile powder! Yes, I sampled right outa the bottle---straight up! I used it in a Texas-style chili, along with the Red Chile powder. The combo is delicious! I lived in Las Cruces, once upon a time, and absolutely love New Mexico cuisine. It is really nice to be able to get the actual ingredients for NM-style cooking. This is a combo review since I got the Red powder too. Both are awesome.

I have always loved Hatch Green Chile's. I grow them in my backyard, however it is easier to purchase them already roasted, peeled and chopped.
Thomas W · Verified
My husband loves Hatch Pure Green Chile roast. He puts it in stew, soups, on burgers, spagetti, sandwiches and even in creamy salad dressings. His variety of choice is HOT. We've gifted some to my nephew also and his family also loves it. I prefer medium, but it sells out fast.

Powder was good & had the right amount of spice. Excellent product.

After receiving both Hot and Medium chopped Chile mixing them together when cooking is just right amount of heat. I made my first batch of Green Chile a few days ago and it was perfect. I love the Hatch Chili Stores products. Living in Oregon it is a very nice treat to get them shipped.

We know you're wondering.

Hatch Chile is a protected regional designation — like Champagne or Vidalia onions — for chile grown exclusively in the Hatch Valley of southern New Mexico. The valley's mineral-rich Rio Grande soil, 300+ days of intense sunshine, and 40-degree temperature swings between day and night produce 23% more flavor compounds than chile grown elsewhere. Most "green chile" in grocery stores is Anaheim — a milder, less complex pepper mass-produced in California or Mexico. All of our products are Hatch Chile Association certified, meaning they were grown in the Hatch Valley, not relabeled from another region.

All frozen products ship Tuesdays and Wednesdays in insulated, recyclable containers packed with dry ice. We ship from distribution centers in both New Jersey and California so ground shipping reaches most U.S. addresses in 1–5 business days — no matter where you live. Overnight shipping is available during warmer months. Fresh chile (available July–October) ships same-day on Wednesdays, arriving within 24 hours of harvest.

Medium is our most popular heat level and what we recommend for first-timers — it has a pleasant, building warmth that lets you taste the signature smoky-sweet Hatch flavor without overwhelming heat. Mild is perfect for kids, spice-sensitive palates, or dishes like rellenos where you want flavor without the kick. Hot delivers the classic New Mexican heat that restaurants in Albuquerque and Santa Fe are known for. X-Hot is for serious heat seekers only. When in doubt, start Medium — you can always go hotter next time.

Roasted frozen Hatch chile lasts 12+ months at 0°F without significant quality loss — this is how most New Mexicans stockpile their annual supply and enjoy Hatch chile year-round. We recommend portioning into meal-sized bags and pressing out as much air as possible before freezing. Our jarred sauces, salsas, and dried products like red chile pods and powders are shelf-stable for 12–18 months in your pantry.

Yes — discounts apply automatically at checkout with no code needed. For pantry items like jarred chile, sauces, salsas, and spices: 3+ items saves 10% and 6+ items saves 15%. For frozen products like roasted chile, rellenos, tamales, and chimichangas: 2 items saves 20%, 3 saves 25%, and 4+ saves 30%. Mix and match anything within each collection — the more you stock, the more you save.

Every product we sell is Hatch Chile Association certified — your guarantee that the chile was grown in the Hatch Valley of New Mexico, not Anaheim or imported chile relabeled under the Hatch name. Our family has farmed the Hatch Valley since 1917 when our great-great-grandfather Joseph Franzoy became the first commercial chile farmer in the region. Five generations later, we still farm 300+ acres and grow 10+ cultivar varieties including Big Jim, Sandia Select, and Lumbre. Over 500,000 customers and 12,000+ verified 5-star reviews — you're buying from the source.

These are the products our 500,000+ customers come back for again and again. Our flame-roasted frozen Hatch chile is by far the most popular — flash-frozen within hours of roasting to lock in the same smoky, earthy flavor you'd taste standing next to a roasting drum in Hatch during chile season. Pair it with our handmade green chile rellenostraditional tamales, or jarred sauces and salsas for a complete Hatch Valley pantry.
