Lumbre is Spanish for fire, and the name is accurate. This is the hottest variety we carry — a Hatch Valley chile that runs 12,000+ SHU (X-Hot; varies year to year) and was bred specifically for chileheads who find Big Jim (~6,500 SHU, Medium) too mild and Sandia Select (~9,500 SHU, Hot) not quite enough. Lumbre sits well above our Hot tier; it delivers serious, building heat that lingers. It's significantly hotter than a jalapeño but well short of habanero territory (about one-tenth of habanero's heat). If you're not already comfortable eating hot chiles, this is not the right starting point.

The same Hatch Valley growing conditions that make Big Jim and Sandia exceptional — alkaline Rio Grande bottomland soil, high elevation, the swing between hot desert days and cool nights — work in Lumbre's favor too. The flavor underneath the heat is still distinctly Hatch: roasted, complex, earthy. It's not just pepper heat with nothing behind it. Lumbre is significantly hotter than a jalapeño (2,500–8,000 SHU), comparable to the low end of a serrano, and well short of habanero territory (100,000+ SHU — Lumbre is roughly one-tenth that heat).
