What is roasted Hatch green chile?
This is the skip-the-mess version of Hatch season: real Hatch green chile, flame-roasted, partially peeled, vacuum-sealed, and flash-frozen within hours of harvest. You get the smoky depth of a traditional roast without the grill, the broiler, or the cleanup. It is grown in the Hatch Valley of New Mexico, along the Rio Grande, the one place true Hatch chile comes from. Never imported.
New to it? It is smokier and more complex than a jalapeño, with heat that runs from mild (under 2,000 SHU) to extra-hot (11,000+ SHU) depending on the variety. See how Hatch compares to Anaheim, pick your spice with the heat level guide, or roast your own from fresh chile in season.
How do you use roasted Hatch chile?
Think of roasted Hatch chile as a flavor starter: it adds smoky depth fast, with no long simmer required. The high-impact uses people come back to:
- Breakfast
- Fold into scrambled eggs, breakfast burritos, hash browns, or a breakfast sandwich.
- Fast weeknight dinners
- Stir into soups, stews, chili, or rice bowls for instant Southwestern flavor.
- Smother everything
- Build it into enchilada sauce, burrito sauce, or a creamy green chile sauce.
- Queso & dips
- Melt into cheese dip for game day. Start with green chile queso.
- Burgers & grilled meats
- Top burgers, brats, chicken, or pulled pork for smoky heat without the work.
- Cook from frozen
- For soups, stews, chili, and sauces, skip the thaw and add it straight from the freezer.

How do you thaw and store it?
Roasted chile is a freezer staple. Thaw what you need, keep the rest frozen, and portion it so it is easy to grab on a busy night.
- Thaw overnight in the fridge for the best texture and easiest planning.
- In a hurry? Drop the sealed bag in cold water, changing the water every 10 to 15 minutes.
- Cook straight from frozen for soups, stews, sauces, and chili. Just simmer a few extra minutes.
- Portion for later: after thawing, divide into ½ cup or 1 cup amounts and refreeze flat. One meal’s worth, ready any night.
Each box is five 1-pound vacuum-sealed bags, roughly 10 to 15 meals, and keeps 12+ months at 0°F. For prep help see the preparation instructions, and if you are ever unsure, here is how to tell if Hatch chile has gone bad.

Any last questions?
Yes. Every order from The Hatch Chile Store ships with dry ice in an insulated box. We ship Tuesdays and Wednesdays only. Most orders arrive frozen solid in 1 to 3 business days anywhere in the US. If anything shows up thawed, contact us. We'll make it right. 100% satisfaction guaranteed.
- Mild (0–2,000 SHU): Smoky Hatch flavor with barely any heat. Great for queso, eggs, and kids.
- Medium (2,000–7,000 SHU; Big Jim ~6,500 per NMSU CR706): Our bestseller. You'll feel a kick, but it won't take over the dish.
- Hot (7,000–11,000 SHU): Real heat that builds. For people who like spicy food.
Not sure? Start with Medium. It's what most of our customers order.
Yes. Our roasted Hatch green chile is flash frozen at harvest and ships every week, all year, from The Hatch Chile Store. Fresh unroasted chile is only available during harvest season from July through October.
Yes. Thaw what you need in the fridge overnight and refreeze the rest. Each vacuum-sealed bag is 1 lb. Quality stays good for 12+ months at 0°F.
Most canned "green chile" is Anaheim pepper grown in California or Mexico, packed in vinegar brine for shelf life. Our Hatch green chile is a different pepper entirely, grown in the Hatch Valley of New Mexico and flame-roasted the traditional way. No brine, no vinegar, no preservatives. We've been farming chile here for five generations, since 1917. The Hatch Chile Association certifies our product as authentic Hatch Valley grown.
Yes. Our Hatch green chile is fully flame-roasted, partially peeled, vacuum-sealed, and flash frozen. Just thaw and add to your food. Available chopped or whole. Zero prep, zero mess.
Chopped is the easier pick for most recipes. Use it in green chile cheeseburgers, breakfast burritos, eggs, queso, green chile stew, soups, and mac and cheese. Whole is what you want for chile rellenos, layered enchiladas, or sandwiches where you want a full roasted pepper. If you're not sure, go with chopped.
Each box is 5 lbs (five 1 lb vacuum-sealed bags). That's roughly 10 to 15 meals depending on how heavy you pour. Most repeat customers order 2 to 3 boxes to stock their freezer and save with our volume discounts (up to 30% off at 4+ boxes). If you cook with chile a few times a week, 10 to 15 lbs will last 2 to 3 months.
