The green chile from The Hatch Chile Store is the highest quality available. The chile is large, meaty and full of the fresh roasted flavor I crave. The packaging is even better than when I used to do my own. No fuss, no muss, just open a bag and enjoy while you think about how you miss living in New Mexico.

The order was shipped to my son at college out of state. It arrived fully frozen, on the day it was expected, making it possible for my son to pop most of it into his freezer just before campus closed down for Thanksgiving break. He shared 2 lbs with a group of NM students who gathered over the weekend for a Friends-Giving feast. They were really happy that this year's Big Jims tend to the hot side of the spectrum and totally enjoyed a taste of NM for their holiday far from home!

Great! Got the Sandia this year. We have gotten it unpeeled for roasting in past years and chopped for easier “access” this year, and both are fantastic. Being born in New Mexico but now living in New Jersey, we need our Green Chile fix! Will be back for more next year! Purchase with Confidence! Yum.

The mild sauce has no heat but a lot of flavor. The medium has a kick to it. We’ve also had the hot and it’s too much for our children but still delicious. If you do t make homemade sauce and want authentic flavor chile then I recommend this.

Back in 1970 I went to homecoming with my friend Joanie. It was a complete disaster, no fault of hers, it was completely my fault. 47 years later I find myself still telling her I was sorry and still hearing how mad she was. The other night at a high school reunion that she coordinated I gave her this " Got Hatch " T shirt, her maiden name was Hatch. Now when we part company or hang up on the phone its " love you " like friends should be saying.Thank you so much, and please keep in touch ......Rick Evers

Chili powders come and go with not much fanfare but I always look towards New Mexico for the real thing. I grow my own New Mex 64 and Big Jim peppers for my salsa and guacamole recipe and also for my chili. I haven't figured out how to make the powder yet so I will rely on you. The mild is tame enough for the my friends here in Illinois but for me I just kick it up a bit. Thank you for your communication and prompt service. Can I come work for you ? Thanks again ........... To me, the Big Jim chilies are the best. They have a wonderful flavor and just the right heat. Once in awhile you will get a burner, but these are the perfect chilies to add to most any New Mexican dish. We love hot chilies, put don't like chilies that burn your mouth and these are consistently tasty and perfect heat. We order the frozen whole chilies and they come to us in Arizona still fully frozen and ready to put in the freezer.
