I purchased 2 25lb. Boxes and they were not
Extra hot..
I replied through email and sent photos.
The reply was ..I am with the owner and they said to cut the pepper in half and lick it!
I wouldn't know how hot it was if I didn't
LICK IT !

Right now my chiles are in the freezer, for winter dishes. I lived in New Mexico so I know first hand that Hatch Chiles are the BEST! My local grocery in Wisconsin roasts Hatch Chiles every August, oh that roasted Chile fragrance! There's nothing like it. I buy from Hatch Chile because I can get the mild flavor. They arrived still frozen in 1# bags. Perfect for my family . Keep up the great service.

Hi,
1st time buyer and I was so excited to receive freshly picked hatch green chilies. Maybe I had way to high of expectations because the chilies I received were very small and very thin. Tips were starting to rot. All I wanted was decent size chilies to make chili relleno's. After roasting they split and there wasnt enough skins to cover cheese after I put it inside.
My bad.. I guess it is buyer beware. Flavor was out of this world though.
Very expensive lesson and I feel so bad about this.
Thank you
Brad

Ordered a 25lb. box of medium/Big Jim's. Really nice batch. I've already roasted/peeled/seeded/bagged and frozen for use until next season. My yield was about 10 small zip-loc bags (2-3 cups of roasted chiles per bag). Really liked the heat level on this year's crop. Made up a pot of pork green chile 2 days ago and everyone loved it. Keep up the great work and see you next year!

Being from NM but living in another state, the Hatch Chile Store is the perfect solution to my chile requirements. You might scoff at using the word requirement with chile, but if you are from NM you get it. :) I've ordered from the Hatch Chile Store several times and my order has been perfect every time. The chile is in excellent condition and looks as if it was picked the day before, which I believe is probably the case. I will absolutely order from them again. Thank you Hatch Chile!!!!

We are originally from New Mexico and hatch chili is a main stay in our household. We have it with almost every meal. And with that being said every single previous order we have received has been flawless. Service and the quality has been outstanding but the last order we received last week was already turning red and very mushy . We think it was due to a shipping delay so therefore you will always receive a top rating from us . And we referred you to a lot of our friends. We just excepted the order and determined that it was out of your hands . Thank you

Great chiles, excellent delivery.
I have ordered chiles previously. This time, I ordered Big Jims, and they were very mild and meaty. Next year, I may order a hotter chile. When I checked the status of my order, I was told that mild peppers ship on Thursday for Friday delivery. Hotter peppers ship on Wednesday for Thursday delivery. Good to know. I had not seen that published elsewhere.
