Order arrived and the chilies were all fresh and firm. Roasted up really well. The peppers are about as hot or a touch hotter than a jalapeno pepper. I have been swapping in my supply of medium hot Hatch chilies for recipes that call for jalapenos with very good results.

I love Hatch Chile Company, they have always provided the freshest, tastiest chilies to me in Washington, DC. This kind of chile is next to impossible to find east of the Mississippi, but I always love coming home to see that box from New Mexico sitting on my porch each fall. The next day, my house is filled with the wonderful aroma of roasting chilies in my oven, no big rotating drums roasting chilies here! I look forward to each year's crop, this year is as great as all other years for quality. I also love how Hatch Chile delivers in a timely manner, they always arrive with that just picked smell and snap.

I bought the mild and the medium and roasted them. The mild peeled beautifully...I had a really hard time peeling the medium...not sure why. I had to throw away a lot of the medium. But...they are both delicious...I'll buy them again next year.

I have purchased Big Jims in the past. After not buying them for several years and missing them I decided to check the prices. I stopped buying because they became too expensive. I was disappointed with my 25 lbs of chilies. A lot of them were old and it's hard to work with when they're old. There was even a rotten chile in the middle of the box. Disappointed, hopefully quality control will improve the next time I order, because I do love these Chiles and the flavor they bring to my cooking.

Never tried these until this year when I ordered 10 pounds of them, after getting them home and roasting them, I put in another order for 25 pounds. They are really meaty and heat level is mild compared to my Big Jim's. So this year I put up 85 pounds for the year, what can I say except I am a hatch head!!!!!!!!

We can't get through Summer without our Hatch green chile fix. The store makes ordering easy and the chiles arrived fresh and ready for roasting. The roasted green chiles freeze well and we get to enjoy Hatch green chile sauce or stew when we like throughout the seasons.

I didn't get as much chile out of my roasting and peeling process as I expected. The pods seemed to not have as much fruit and moisture in them, and it was difficult to roast them on my grill. However, as delivered, the pods were in great shape, and I got enough in the freezer now to last me until next year. B?)

Pods were full of fruit and moisture and roasted on the grill very nicely. Peeling was very straightforward, so we have a lot of good chile in the freezer now. B?) Product was delivered fresh and in good shape with only one or two pods in a 25 lb box having to be tossed because of mold.

They are the best. I ordered on the chilies on Sat. Aug. 26 but it took two weeks for them to come. I thought they would have been picked on the 29th and shipped for me to receive them on the Aug.1. I did not receive them until the 8th which was a hassle to get 50 lbs roasted in one night because I had plans on leaving town on the 9th. My UPS does not deliver til 5=5:30 p.m. I think if Hatch is not going to send out the week you ordered for whatever reason I should have been sent an email explaining why they would be postponed a week.

We have been ordering our green Chile for over a year. We always order the same thing. This time the green Chile was the consistency of apple sauce. This is the first time it’s been like this. Usually there are pieces of Chile like in the photo in the store. Not sure if we ordered the wrong thing.
We are using it and it tastes wonderful but the consistency is not wha5 we are used to.
Thanks Deb Schindel
