I used them to make my breakfast green chile sauce with my hot sandia chile that i roasted and freezed last year i thought it would be to hot because i normally use the big jims but the medium chile sauce came out perfect i couldnt tell the difference. all in all its very good. My only suggestion would be to put that same batch of mild, medium, and hot in 4 oz cans for a longer shelf life and you want need shipping protection also if you did not want to roast your own chile this would be easer to just open cans and make your green chile sauce etc.

Great chile powder! Yes, I sampled right outa the bottle---straight up! I used it in a Texas-style chili, along with the Red Chile powder. The combo is delicious! I lived in Las Cruces, once upon a time, and absolutely love New Mexico cuisine. It is really nice to be able to get the actual ingredients for NM-style cooking. This is a combo review since I got the Red powder too. Both are awesome.

Frozen products ship on Tuesdays or Wednesdays according to the destination ZIP and service. Economy generally takes 1–3 business days by ZIP in the lower 48; Alaska and Hawaii are Overnight only. Fresh chile ships on Wednesdays during harvest, with Overnight or 2-Day Air options. Overnight is recommended and is the only speed we guarantee.
