Extremely flavorful with perfect Chile heat. Roasting goes more quickly as the chiles peel very easily when properly blistered. These are the best chiles!

Use it basically for enchiladas, eggs and menudo. I am going to order mild for wife - she’s a little of weak chili that’s not mild.Enjoy it !

The Chile itself is AWESOME. I love getting my chile roasted, peeled and frozen. I use to order at least 10 big burlap bags of this and then roasted it and peeled it with my family. It was a tradition. However, all my kids are grown and do their own now, so I don't need more than 5 pounds a month. My one complaint is that I have an ongoing order for every month and some months it hasn't gone through. If I call, I always get it but I think the computer system might need upgrading so that my order goes through each month.

Received my box of chile and started roasting and freezing the next day... of course the family sampled a good amount as well! Out of the 25 lbs, only lost 4 at the very bottom, so I rate this a great investment. Now planning enchiladas verdes, tamales de rajas y queso, salsa deliciosa, huevos con chile, (could go on!) Got 16 dozen out if the order...will definitely be a repeat customer (this is my second year ordering)

This year was our second ordering Joe Parker Chile's from the Hatch Chile Store. We had lived in New Mexico for 28 years before retiring in Florida. We loved NM (and still do). And we missed all the New Mexican foods we grew to love.
The service is great, last year was perfect, this year a few Chile's did not survive the trip too well. I followed the directions or the notice of delivery and emailed them a picture of damaged Chile's. Within a few hours the sent two emails - one was a notice of credit and the second was the actual refund. I was very impressed and will continue to order from the them going forward. That is GOOD customer service.
Oh, and the Chile's ... they were and are awesome.

Received my shipment of Hatch Chile and roasted it .. had my first taste of Chile wrapped in a tortilla… great flavor the right amount of heat. Arrived fresh with only 3 pods that had ripened sooner than later! I will order every season as it beats buying at local grocery stores here in Michigan… much fresher and larger pods!

Ordering anything Fresh during the heat of summer is problematic even with the fastest shipping--which is not always so dependable in these times (we did have 2 spoiled chiles--that affected a few of the other chiles packed next to them)--the Only reason for our 4 star rating...otherwise, it was another box of wonderful Hatch green chile--tasty and beautiful.

I buy and roast my own fresh chiles every year. This was my second year buying from the Hatch Chile Store. The service was great and the chiles taste fantastic. I purchase twenty-five pounds and roasted them on my outdoor grill. We froze most of them for later use. I live in Kansas and would do this again in a heartbeat. Larry

We received a 25 pound box of fresh hot Sandia chile. Perfect condition. Took about 48 hours to arrive in Juneau AK from time it shipped. We roasted it over charcoal and alder, packed it 4-5 pods per Ziploc sandwich bag - mostly 4 pods. We do not peel it until we use it. Ended up with 44 bags. Kept 2 bags aside and put the other 42 Ziploc bags at 7 to a gallon freezer bag and dropped in the freezer. That is 1/2 year supply. Got another 25 pounds coming next week. We love this chile. Sandia is consistently hot - not real hot - with an excellent taste. The Big Jim are medium with some hot ones occasionally. We have come to prefer Sandia.

In every profession, there are some individuals who are exceptionally gifted and talented and their levels of achievement are consistently at the highest level, and these individuals are identified as our “superstars”. Preston Mitchell is one of the exceptional green Chile farmers, and he exemplifies the true definition of loyalty, dedication, and professionalism. Every time I have called him polite courteous, and helpful with my orders. I have been buying the hot green chile and love it. You can’t buy chile like this in California. I now ready to try some of the salsa’s.
