I use BIG JIMS in my chili recipe they bring out a nice even heat throughout the chili they add another dimension of flavor to the chili but they do not over power all the other ingredients and blend in nicely

This was my third box of Hatch green chile this year, due to a recipe my sister gave me that I find addictive. Anyway, since the Sandia peppers were no longer available, I tried these Charger chiles. They are well formed and sturdy and would be a good choice for chiles rellenos. But I don't think they have quite as much flavor as Sandia. The level of spiciness is as described. Be sure to char them thoroughly in order to get the skins off.

I would have given these chiles 5 stars, but they are not medium hot. If anything, mild is more like it. I've had extra hot, mild and these. Next season I'll order hot.
Overall the peppers are delicious. I ordered 75 pounds for two people for the year. Yeah, we're Hatch Chile heads here.

I was so happy to receive a note in OCTOBER about being able to order Hatch Chile Peppers. When they arrived in EXCELLENT condition I was pleased but even more pleased when I ate the first pepper. The Charger was so much more meatier than other Chilies I have eaten outside New Mexico. Also, I LOVE the Medium-Hot flavor, I truly love hot but not all the time. This medium hot Chile is going to be my go-to choice with a few HOT-HOT peppers of course just to get my blood boiling again. YUM!! Can't wait for the next Hatch Chile Season to start and am excited to know it will last well thru October!

We bought late in the season and glad we did. We did first pick with a different company and received puny unripe chile. When our Hatch chile showed up, they were firm and ripe with excellent taste! It wasn't hot, but it did have excellent taste.
