Most of the pods were small, which is time consuming. As a professional chef for over 30 years, I like things that are efficient. Roasting, then peeling a 3-4" pods was tedious. Thankfully, there was a game on TV! There is a touchstone with NM chile (I went through high school and college in NM) that you need to embrace. So many of us move away, fresh Hatch chile is that 'thing' that brings us back, if only in our kitchens. We tell stories, we taste and we explain that state of 'Enchantment.'
You have a very special product that requires very special messaging. It's not just a condiment, it's a way of looking at and enjoying Life!
Thank you for re-kindling that spicy spark in my life!

Received the red chilies in a box fresh ! About 10 were in pretty rough shape had to throw away ! Roasted the rest with olive oil , salt and pepper came out good! Let them cool and peeled the skins off . Some were easy others were very tough to get skin off ! Taste was excellent !

I knew I was ordering at the tail-end of the season, but I still had to get my hands on some Hatch Chilies. So I placed the order and two days later a box of fresh chilies shows up at my door in Richmond, Virginia. I quickly roasted and skinned them and they taste phenomenal! I cant wait to enjoy these throughout the winter. I'll definitely be ordering again next year - but more like August, not October.

I would prefer getting my fresh red at the “christmas” stage...less spoilage and more meat...easier to roast by hand...the taste is great. I could always buy an extra box to make sure I would get all the red that I wanted...just my preference. Have a nice holiday season. Thanks

So far my only complaint is that I misread description of product. I thought I was ordering dried red chili pods not fresh/wet red. Wish the crop was spicier with more heat.

The Sandia has been really good. We made some into chile rellenos and some chopped for queso, and chopped and froze the rest. I will use it at Christmastime. Only one pepper was spoiled when we received the box so very happy with the packaging. Just thought the chile and shipping is a little expensive so hopefully we can buy next year.
