What is the difference between fresh, roasted, and frozen Hatch chile?
Fresh chile is sold raw during the August–October harvest. Roasted chile has been flame-roasted (which blisters the skin for easy peeling) and is sold either fresh-roasted in season or flash-frozen for year-round shipping. Frozen roasted is what most customers buy outside of harvest season — same flavor, available 12 months a year.

How does shipping work for frozen products?
Frozen products ship on dry ice via UPS or FedEx with 1–2 day transit. We ship Monday through Wednesday only, so frozen orders never sit in a warehouse over a weekend. Shipping is free on orders over $99.

We ship to all 50 U.S. states; Alaska and Hawaii frozen orders ship via expedited service due to dry-ice transit time. We do not currently ship internationally.
