Welcome to the original Hatch Chile Store — your direct source for authentic Hatch chile, founded in 2005 by Preston Mitchell, a 5th-generation Hatch Valley farmer descended from Joseph Franzoy, the first commercial chile farmer in Hatch, New Mexico.

Every product on this page is grown, roasted, and packed in the Hatch Valley — the narrow stretch of farmland between Arrey and Tonuco Mountain that gives this chile its unmistakable smoky, complex flavor. Generic "Hatch-style" chile grown in Mexico or California can use the name; only chile actually grown in this valley carries the Hatch Chile Association certification mark we honor on every order.

Whether you're stocking up during peak roasting season (late August through early October), restocking your pantry mid-winter, or shopping for the chile-head in your life, this is the complete catalog: fresh roasted, flash-frozen, jarred sauces & salsas, freeze-dried, powders, tamales, rellenos, ristras, and more — shipped on dry ice nationwide.

Quick answer: Hatch Chile Store sells authentic Hatch chile sourced directly from the Hatch Valley, New Mexico. We carry fresh, frozen, roasted, jarred sauces, dried pods, powders, tamales, rellenos, and ristras. Founded in 2005 by 5th-generation Hatch Valley farmer Preston Mitchell, we are certified Hatch Valley grown and ship nationwide on dry ice.

How to Choose Your Hatch Chile Products

Fresh vs. Frozen vs. Jarred — Which Should You Order?

  • Fresh Hatch chile is only available in season (late July through early October). It's the most flavorful but most perishable — order it if you'll cook within a week or plan to roast and freeze a batch yourself.
  • Roasted, peeled, frozen Hatch chile is the year-round workhorse. Flame-roasted, hand-peeled, and flash-frozen at peak ripeness — same flavor, available 12 months a year. Ships on dry ice.
  • Jarred sauces and salsas are shelf-stable, ready to use, and ship cheaper than frozen. Best for enchiladas, posole, smothering, and gifting.
  • Freeze-dried Hatch chile rehydrates in minutes and stores for years. Best for camping, travel, and ultra-long pantry shelf life.
  • Powders & spice blends are for finishing dishes, rubs, dry seasoning, and even bloody marys. Long shelf life.

How to Pick Your Heat Level

Hatch chile heat ranges from about 1,000 SHU (mild) to 15,000+ SHU (X-hot) — well below jalapeños on the high end but with a deeper, smokier flavor at any heat. Most first-time buyers go medium. See our full heat-level guide →

How Much to Order

Five pounds of fresh roasted feeds about 8–10 family meals. A 12-jar sauce bundle covers a household for roughly three months of regular use. For freezer stocking during harvest, 25–50 lbs is the typical seasonal buy. Bulk and wholesale buyers — see our wholesale page.

Why buy from us:

  • Direct from our family farm. Preston, our family, and our crew grow, roast, and pack everything you order — from a working chile farm in Hatch, New Mexico, not a re-seller's warehouse.
  • 5+ generations in the Hatch Valley. Founded by Preston Mitchell, a direct descendant of Joseph Franzoy — the first commercial chile farmer in Hatch.
  • Certified Hatch Valley grown. Member of the Hatch Chile Association, which administers the certification mark that defends "Hatch chile" against generic poblano substitution.
  • 30,000+ verified-buyer reviews, averaging 4.7/5 stars across our catalog.
  • Frozen ships on dry ice. Nationwide. We ship Mon–Wed only so nothing sits in a weekend warehouse.

Frequently Asked Questions

Where does your Hatch chile come from?
Every product on this site is grown in the Hatch Valley of New Mexico — the narrow stretch of farmland between Arrey and Tonuco Mountain. Our family-owned farm is in Hatch, NM, and Preston Mitchell, our founder, is a 5th-generation Hatch Valley farmer descended from Joseph Franzoy, the first commercial chile farmer in the region.
Is your chile actually authentic Hatch chile?
Yes. We are members of the Hatch Chile Association, which administers the certification mark for chile genuinely grown in the Hatch Valley. Generic "Hatch-style" chile sold elsewhere is often poblano grown in Mexico or California — ours is the real thing, traceable to specific farms in the valley.
What is the difference between fresh, roasted, and frozen Hatch chile?
Fresh chile is sold raw during the August–October harvest. Roasted chile has been flame-roasted (which blisters the skin for easy peeling) and is sold either fresh-roasted in season or flash-frozen for year-round shipping. Frozen roasted is what most customers buy outside of harvest season — same flavor, available 12 months a year.
How spicy is Hatch chile?
Hatch chile heat ranges from approximately 900 SHU (Mild — Joe Parker, 1904, NuMex 6-4) up to 12,000+ SHU (X-Hot — Lumbre) across the cultivars we grow. Mild varieties are family-friendly with gentle warmth; Big Jim (~6,500 SHU per NMSU CR706) is our Medium workhorse; Sandia Select (~9,500 SHU) is our Hot tier, and Lumbre (12,000+ SHU, varies year to year) is the X-Hot end for serious chile-heads. See our Heat Level Guide for variety-by-variety detail.
When is Hatch chile in season?
Hatch chile is harvested from late July through early October, with peak roasting season from mid-August through late September. Fresh chile is only available during these months. Frozen, jarred, dried, and powdered Hatch chile products ship year-round.
How does shipping work for frozen products?
Frozen products ship on dry ice via UPS or FedEx with 1–2 day transit. We ship Monday through Wednesday only, so frozen orders never sit in a warehouse over a weekend. Shipping is free on orders over $99.
Do you ship to Alaska, Hawaii, or internationally?
We ship to all 50 U.S. states; Alaska and Hawaii frozen orders ship via expedited service due to dry-ice transit time. We do not currently ship internationally.
How long does roasted Hatch chile last in the freezer?
Vacuum-sealed, our flash-frozen roasted chile keeps full flavor for 12+ months in a 0°F freezer. Once thawed, use within 7 days; do not refreeze.
What is your return policy?
We offer a 30-day satisfaction guarantee on every order. If anything is not right — quality, freshness, shipping damage — email support@hatch-green-chile.com and we will make it right.
Can I buy in bulk for restaurants or events?
Yes. We offer wholesale pricing for restaurants, food-service operators, caterers, and large events. Visit /pages/wholesale-hatch-chile or email support@hatch-green-chile.com for a quote.

We know you're wondering.

Hatch Chile is a protected regional designation — like Champagne or Vidalia onions — for chile grown exclusively in the Hatch Valley of southern New Mexico. The valley's mineral-rich Rio Grande soil, 300+ days of intense sunshine, and 40-degree temperature swings between day and night produce 23% more flavor compounds than chile grown elsewhere. Most "green chile" in grocery stores is Anaheim — a milder, less complex pepper mass-produced in California or Mexico. All of our products are Hatch Chile Association certified, meaning they were grown in the Hatch Valley, not relabeled from another region.

All frozen products ship Tuesdays and Wednesdays in insulated, recyclable containers packed with dry ice. We ship from distribution centers in both New Jersey and California so ground shipping reaches most U.S. addresses in 1–5 business days — no matter where you live. Overnight shipping is available during warmer months. Fresh chile (available July–October) ships same-day on Wednesdays, arriving within 24 hours of harvest.

Medium is our most popular heat level and what we recommend for first-timers — it has a pleasant, building warmth that lets you taste the signature smoky-sweet Hatch flavor without overwhelming heat. Mild is perfect for kids, spice-sensitive palates, or dishes like rellenos where you want flavor without the kick. Hot delivers the classic New Mexican heat that restaurants in Albuquerque and Santa Fe are known for. X-Hot is for serious heat seekers only. When in doubt, start Medium — you can always go hotter next time.

Roasted frozen Hatch chile lasts 12+ months at 0°F without significant quality loss — this is how most New Mexicans stockpile their annual supply and enjoy Hatch chile year-round. We recommend portioning into meal-sized bags and pressing out as much air as possible before freezing. Our jarred sauces, salsas, and dried products like red chile pods and powders are shelf-stable for 12–18 months in your pantry.

Every product we sell is Hatch Chile Association certified — your guarantee that the chile was grown in the Hatch Valley of New Mexico, not Anaheim or imported chile relabeled under the Hatch name. Our family has farmed the Hatch Valley since 1917 when our great-great-grandfather Joseph Franzoy became the first commercial chile farmer in the region. Five generations later, we still farm 300+ acres and grow 10+ cultivar varieties including Big Jim, Sandia Select, and Lumbre. Over 500,000 customers and 12,000+ verified 5-star reviews — you're buying from the source.

These are the products our 500,000+ customers come back for again and again. Our flame-roasted frozen Hatch chile is by far the most popular — flash-frozen within hours of roasting to lock in the same smoky, earthy flavor you'd taste standing next to a roasting drum in Hatch during chile season. Pair it with our handmade green chile rellenostraditional tamales, or jarred sauces and salsas for a complete Hatch Valley pantry.

Every product here is made with Hatch Chile Association certified chile — grown in the Hatch Valley of southern New Mexico by our 5th-generation family farm, not Anaheim or imported chile sold under the Hatch name.
