What is the difference between fresh, roasted, and frozen Hatch chile?
Fresh chile is sold raw during the August–October harvest. Roasted chile has been flame-roasted (which blisters the skin for easy peeling) and is sold either fresh-roasted in season or flash-frozen for year-round shipping. Frozen roasted is what most customers buy outside of harvest season — same flavor, available 12 months a year.
How spicy is Hatch chile?
Hatch chile heat ranges from approximately 900 SHU (Mild — Joe Parker, 1904, NuMex 6-4) up to 12,000+ SHU (X-Hot — Lumbre) across the cultivars we grow. Mild varieties are family-friendly with gentle warmth; Big Jim (~6,500 SHU per NMSU CR706) is our Medium workhorse; Sandia Select (~9,500 SHU) is our Hot tier, and Lumbre (12,000+ SHU, varies year to year) is the X-Hot end for serious chile-heads. When is Hatch chile in season?
Hatch chile is harvested from late July through early October, with peak roasting season from mid-August through late September. Fresh chile is only available during these months. Frozen, jarred, dried, and powdered Hatch chile products ship year-round.
How does shipping work for frozen products?
Frozen products ship on dry ice via UPS or FedEx with 1–2 day transit. We ship Monday through Wednesday only, so frozen orders never sit in a warehouse over a weekend. Shipping is free on orders over $99.
Do you ship to Alaska, Hawaii, or internationally?
We ship to all 50 U.S. states; Alaska and Hawaii frozen orders ship via expedited service due to dry-ice transit time. We do not currently ship internationally.
How long does roasted Hatch chile last in the freezer?
