What is roasted Hatch green chile?
This is the skip-the-mess version of Hatch season: real Hatch green chile, flame-roasted, hand-peeled, vacuum-sealed, and flash-frozen within hours of harvest. You get the smoky depth of a traditional roast without the grill, the broiler, or the cleanup. It is grown on our family farm in the Hatch Valley of New Mexico, along the Rio Grande, the one place true Hatch chile comes from. Never imported.

How do you thaw and store it?
Roasted chile is a freezer staple. Thaw what you need, keep the rest frozen, and portion it so it is easy to grab on a busy night.
- Thaw overnight in the fridge for the best texture and easiest planning.
- In a hurry? Drop the sealed bag in cold water, changing the water every 10 to 15 minutes.
- Cook straight from frozen for soups, stews, sauces, and chili. Just simmer a few extra minutes.
- Portion for later: after thawing, divide into ½ cup or 1 cup amounts and refreeze flat. One meal’s worth, ready any night.

Put together a green chile pork stew that recieved rave reviews. Excellent flavor. Heat was a little below what what I personnaly prefer but was good for those who don't normally consume chile.
I live an hour north of Pueblo, CO. I know my fellow Coloradians will disown me for this review, but damn this chili is legit. Not to mention this company makes sure you are happy. I have always loved Hatch Green Chile's. I grow them in my backyard, however it is easier to purchase them already roasted, peeled and chopped.
After receiving both Hot and Medium chopped Chile mixing them together when cooking is just right amount of heat. I made my first batch of Green Chile a few days ago and it was perfect. I love the Hatch Chili Stores products. Living in Oregon it is a very nice treat to get them shipped.

Most canned "green chile" is Anaheim pepper grown in California or Mexico, packed in vinegar brine for shelf life. Our Hatch green chile is a different pepper entirely, grown on our family farm in the Hatch Valley of New Mexico and flame-roasted the traditional way. No brine, no vinegar, no preservatives. We've been farming chile here for five generations, since 1917. The Hatch Chile Association certifies our product as authentic Hatch Valley grown.
Yes. Our Hatch green chile is fully flame-roasted, hand-peeled, vacuum-sealed, and flash frozen. Just thaw and add to your food. Available chopped or whole. Zero prep, zero mess.
Chopped is the easier pick for most recipes. Use it in green chile cheeseburgers, breakfast burritos, eggs, queso, green chile stew, soups, and mac and cheese. Whole is what you want for chile rellenos, layered enchiladas, or sandwiches where you want a full roasted pepper. If you're not sure, go with chopped.
Each box is 5 lbs (five 1 lb vacuum-sealed bags). That's roughly 10 to 15 meals depending on how heavy you pour.
