These are really, really good. But--you need to put more dry ice in or double pack them in cardboard, too (like the chiles were). They were thawed when they arrived.

Cool but not cold. I promptly stuck them in the freezer and crossed my fingers. I haven't gotten sick from them.

That hit the spot! We left New Mexico almost 20 years ago. It’s hard to buy genuine Hatch Green Chili. The stuff in the small cans is terrible.
It’s expensive getting it mailed to California. But well worth it! Now I’m hooked and need to buy more.

I’ll make this simple. If you’ve ever had Hatch Green Chile’s you know how awesome they are, if you’ve never had them, you are missing out on one of the greatest treasures nature has given us. If you’ve only had chili’s out of a can, or the “fresh” peppers from your local grocery store, you have not even come close to tasting such an amazing flavor, and I truly feel sorry for you. Amazing product. I was excited to find these peppers. I made enchilada sauce with them. It was the best I have ever had. I used to work in a Mexican restaurant that made it from scratch also. Love this sauce. Moved out of the West and missed hatch chiles! This sauce kicks the flavor up a notch from the others and takes me back. Easiest way I found to add southwest flavor to things when you are away from the area! Outstanding stuff!
