Never got my x-hot due to weather. I totally understand that nature happens. However my “hot” was as hot as a bell pepper. Purchased 50 lbs.. this makes me super sad. Thank you to the owners for communicating with me but this is a tough one to swallow.

Roasted my 5lb order and placed them in the freezer for use in everything I need peppers for. I’ll use some in my black beans with bacon and kielbasa tonight. Or course it will have onion and garlic too. We put this over yellow rice I make with the same onion, pepper and garlic. Your tongue will beat your brains out trying to get to the next fork full!!! I will order from you from now on and quit raising my own peppers. It’s too easy to get yours for as much as the plants cost to buy.

These chiles arrived fresh and firm. They were moderately hot as advertised with a delicious chile flavor. I roasted, peeled and seeded them the day I got them. They are frozen in one pound bags to be used in chili. Excellent product from a reliable seller.

We LOVE, LOVE, LOVE the Chili Store’s peppers! They are sweet and meaty with just the right level of heat and slickness to make them a culinary delight! Both the red and the green chilies met our standards and enjoyment! Can’t wait until next year’s crop!

I ordered Big Jim Red. Most of the peppers were a lot smaller than the green chilies I got earlier in the season. I was going to use them as red relents but had to pivot and use as sauce. I probably will not order again.

I grew up in Nevada and would get excited each early fall for roasted hatch chile season. My mom would fill the freezer so we could make green chile all winter. After moving to NYC about 10 years ago, no one sells it here. I'm so happy to have come across this local family website that ships in the US. My chiles were perfect! Not a single bad one in the 10lbs box. I roasted the chiles myself on the BBQ and froze them in 1lbs. bags. I'm excited to eat green chile during the cold winter months. Thanks again and will definitely be ordering again next year!

My purchases of green and red chili’s were gifts and the recipients have praised them. I do have a photo of my great nephew’s breakfast eggs made with the green chili’s. His father to whom I sent the chili’s, as a thank you for his kindness to me, took some of his gift from Oakton VA to Chicago to share the pleasure of your fabulous product. They were very much enjoyed as the Chicagoan sent me another photo of a pork stew he was making with the chili treats.
The red chili’s went to my Albuquerque born grandson for his 30th birthday. He resides in Washington, DC.. His mother, who is a fabulous chef, made them into sauce and sent me a photo of them beautifully completed and ready for enjoyment.
Your excellent products and attention to customer service is so appreciated. It is above and beyond and also fun to be able to order gifts that one knows are dependable quality. Thank you!!!
Best Wishes for the upcoming holiday season

I really enjoyed receiving the chilies. The only hiccup I encountered was when I was trying to dry the chilies. I have never tried to dry large chilies that were already red. Red chilies have more water in them, making them heavier to thread on string or sewing thread. The thread kept breaking. I finally did use the fishing line. But being heavy and i live in a humid climate, the chilies didn't dry very well, so i put them on the lowest temp in my oven and dried them that way. Next year, i will order green chilies. The chilies I ordered a few years ago. Dried very well. I still have some.

What a treat it is to receive a shipment from the Hatch Chile Store! Despite being too many states away from enchanting New Mexico, we can count on this store for getting us a piece of New Mexico to flavor our best meals, quickly and so fresh. I will have to order more next year having grossly underestimated how wonderful the chile would be and how well it would ship. Highly recommend for fresh, roasted, dry foods, sauces, all of these treats have arrived safely to us when we are away from our favorite state. Many thanks!

These chiles are as good as chiles get. Every single chile in my 25 pound box was large and meaty. These red chiles have the sweet flavor you expect in the autumn chiles. I recommend them and the Company.

I have bought this since I first discovered it in Las Cruces and so happy that I found a way to get it out here. Florida knows nothing about good Mexican food and I miss it so bad. We ate a lot of Chile Rellenos with green chile sauce and no one knows what it is out here. Just the smell of living in Las Cruces is missed. So many wonderful restaurants that are sorely missed out here. We moved to L.C. in 2006 and came to Florida in 2014(big mistake).

This was my first time ever trying both this shop and this type of chile. My order arrived on time and the chiles are beautiful and smelled amazing right out of the box. I have sense roasted and froze them. My only sadness is, I love these chiles so much I wish I had gotten more! - I would highly recommend not only this shop but these chiles! (buy a lot, you'll want them)

First off, I adore Hatch Green Chiles. I had read remarks from y’all when I was ordering my fresh chiles that this year’s crop was a little milder than usual and recommended customers to select one heat level higher than usual. I usually purchase medium so I ordered Hot. I eagerly received my peppers and roasted them under the broiler within 48 hrs. While the flavor was good, there was very very little “heat” so I even left the seeds in. Still I would rate the heat level as mild and the flavor did not punch through the other flavors. I regret to have to say I was disappointed. I am a loyal customer and will continue to order, however, I am thinking I might need to order extra hot in order to get medium heat?

Best thoughts,

The quality of the peppers meaning size & freshness was perfection. It was almost as if they picked them with great pride and gave a good variation. I originally wanted roasted but it was not available but I'm glad they were not. I had the opportunity to roast them myself on the grill. Had a friend over who loves Hatch as well and we made a nice afternoon of it. The smell was amazing.

The hard brown/black spots in the red chilis made them inedible. Customer service in replacing them was great, though we probably would have just preferred a refund or something as the second box was worse. We felt horrible throwing away 2 boxes of chilis but since we eat with our eyes as well as our mouths, we had difficulty trying to eat the chilis. The hard bumps in the middle of tender chilis would not work in many dishes.
Our green chilis that came earlier in the season were wonderful!

I’m giving two stars. I’m very happy Ethel flavor but I ordered hot the were not even mild. Two weeks later I ordered 10# for my mom in California and again they were not hot barely even mild. I emailed and the response was don’t take out the seeds or membrane. When I responded
did not the response I received back nothing.
