While this is the most I have ever spent on Green Chile, it was well worth it! As a New Mexico Native and a Green Chili "Purist," this is the ONLY place to get Hatch Chile.
The flavor was better than expected, and the medium heat was just enough; not overboard, or unpleasant. Green Chile is an oddity on the Mississippi Gulf Coast, and we would recommend The Hatch Chile Store for those bold enough to experience Chile with FLAVOR, and not just heat!

I try to grow them here in Alabama, but usually it is too wet. That leads to me ordering from these wonderful folks. Gotta do 2 day shipping, but they are fast, fresh, and delicious. I roast them, rinse the charred peel off, vacuum seal, and freeze them. They last all year.

This was my first order. I roasted them over charcoal and peeled them, which was not the onerous task I thought it was going to be, then I packaged them up and most of them went into the freezer. I ordered the medium heat, which I thought tasted rather mild, but my wife thought they were perfect, so I dodged that bullet, haha, as she can't take the heat as I can. So, I made my first baked chile rellenos the other day, and OMG, they were so delicious! I am a total convert, and I will be ordering again.

After two attempts my rellenos still came partially defrosted so I cooked 4 and threw the rest away because I did not want to refreeze them. I did not feel like they would be safe to eat. All of that could be avoided if the packaging was better and the product shipped overnight rather than ground. The chilies were roasted but not peeled so you need a knife to slice through them and you could not always chew through them. The batter on the outside is bland flour, not the traditional egg batter. The rellenos are very expensive to be of such poor quality.

I ordered this roaster because we live in Colorado and went to the Chili festival in Pueblo for the second year and purchased 2 bushels of peppers. I wanted to roast faster then my grill would plus I can roast more at a time. I am very happy with the roaster and look forward to roasting more peppers and other veggies.

My chilies arrived quickly and unspoiled. Out of the 25lbs there were maybe 5 total chilies that were unusable. I got the hot and they are spicy as advertised. I use them in my salsa, so yummy. Next time I’ll do half hot and half medium for more variety. Excellent product :-).
