25 lbs of chilis (140+ chilis) shipped Weds arrived in Maryland on Friday in excellent condition. Roasted in 7 batches of 20 chilis over lump charcoal (1 hour). Steamed bowls full (3 batches) for about 5-10 mins as grilling continued. We cut off tops so that the attached seed clump comes out to better package. We froze 14 packs for 14 batches of green chili sauce. AND THEY TASTE GREAT!

I looked forward to my first order from the Hatch Chile Store. A co-worker had ordered about 300 pounds over the past couple of years.
However, on receiving the order I knew that things were not good as I could smell decay coming from the box. Although I payed for the express shipping to “Insure Freshness”. What I received was anything but fresh. Of 160 peppers in the box, 48 were completely rotten or in stages of decay. Please see the photos. The photos posted are just a few of the almost 25 photos sent to Hatch Chile store.
I contacted the Hatch Chilie store and was offered 5 pounds of chilies to make up for the bad peppers (what happened to the Hatch Chile store’s guarantee)?. I was then offered a 25 percent refund. Whatever. I refused and decided to post for all to see. Do not rely on the additional postage to insure a fresh unspoiled product. Who ever packs your order may just decide to throw in a bunch that should not be shipped.
To say the least, This was my first and last order from the Hatch Chile store.

For those of you that have been eating Green Chile for years and have acquired a taste for the heat this is the chile to pick. I love using Lumbre in recipes I can still have the heat that sometimes gets masks by all the other ingrediants in my enchiladas, burritos, and stews.

I have been roasting chilies for years. These would just not roast well. I had to scrape what little flesh there was. And they were not hot. I will never trust fresh chile from you again.

The best you can get. Cook it correctly it will not disappoint. I can’t get good red chili in AZ, their chile is Tex Mex, I can’t stand it. I’m from NM this is what I want. Thank you for your business ❤️

I love the charger Chile. I ordered 3 5lbs and roasted 10 pounds and have it in my freezer.. I love the charger because it has some heat but not over powering. I will order again next year. Cheryl

(NOTE: I stupidly let my first shipment rot by sitting out for a week. DON'T let these sit around!) These Hatch chiles are just so beautifully good. It's the easiest thing to roast 'em in the oven broiler and peel them afterward. I then sectioned them off into small Ziploc bags that I keep in my freezer, and I just run a bag under the sink when inspiration strikes. These are rated at a "medium" but really the spice is very moderate, and delightful - one reason I just love the Hatches is that they've got that perfect heat and layered flavor, but relatively very little tongue-burning "spice!" They incorporate just wonderfully with onions and garlic and fresh herbs. (They make for absolutely the best scrambled eggs ever, ohhhh my goodness.) I can't recommend The Hatch Chile Store enough! Their prices can't be beat, and the freshness really is impressive. Get 'em, and don't leave them out on the counter!

After having to wait out the rain (if you can believe that in southern New Mexico!) our chili arrived in great shape. We had only one slightly ragged chili in a ten pound box. They were just beautiful! Shipping went well. Thanks for your hard work.

The shipment was delayed a week because of the rain. Understandable no worries about that. The peppers arrived on time in 2 days. Quite a few of them were cut off on the bottom. In addition quite a few were mushy and rotten. Not worth the price I paid. Found better Hatch chili’s at the local grocery store for 99 cents/lb. Sorry but I was expecting better for the price.

was exceptional and has been disappearing rapidly in the form of Rellenos that have been delicious and hefty due to the size of the Pods. I have actually just finished making potato

Best dried Red Chile powder I have used. No added salt or any anti caking powder
that I can detect. I will be ordering more of this powder due to the quality and the
purity. When you use much quantity of Chile powder in a recipe you quickly realize
whether there are additives such as salt etc because the flavor is apparent.
The store bought Chile powder from the spice aisle in the Grocery store aren't even
close in taste or quality to Hatch Chile Store. Thank you for your dedication to Quality.

Best all around flavor, I use it in all my cooking, well almost all. It is the base for my enchilada sauce, green chili etc. I live in Northern Minnesota where black pepper is considered hot.

The absolutely quintessential New Mexico chile. Red or green? I ordered both, the Hatch green (hot!) and a red piquin ristra. I planted a few, but our soil is too rich and composty and we get too much rain for good chiles. I share my order with friends and neighbors who care about having some heat in their cooking, but we don’t have the right conditions and even with very good care/ neglect, I have never been able to get it right. And I am both a gardener and a chile aficionada! The Shenandoah Valley is famous in its own right as an agricultural area, but I miss the Land of Enchantment very much. These chiles bring me home.

Overall the chile I received was good, what made it here that is. I had ordered 25lbs but lost about 1/3 due to spoilage in transit. Even though I had 2day shipping. They seemed very beat up and soggy in box. I have ordered for years and have always expect to lose a few in transit and I am always satisfied, but this year not sure what happened. Im only giving it 4 stars because the chile that made it was of good quality and flavor but the experience with this order would get quite a bit lower rating.

The chile was not HOT. It seems like I received MEDIUM. We will eat it but really disappointed in this product being labeled HOT. As a NM native, this is Not what I expected from hatch chile. ... I am also still waiting on my other order that I placed.
