Ordered 25lbs of the Big Jim. Not spicy at all and roughly 25% went bad in shipping due to poor handling by shipper. A couple handfuls more went bad by the time I started roasting the following day (arrived about 7pm the night before). Shipping was expensive as it was 2 day guaranteed. Overall not impressed.

Chili arrived fresh even with economy shipping. Roasted and peeled it the next day.
It has just the right amount of heat (we mix it with big jim's) and full of wonderful flavor.

Well… my husband and I ordered 25 lbs. thinking we would have to figure out how to freeze or can then to preserve. What ended up happening is we roasted them in small batches on our backyard campfire and have enjoyed them ALL fresh in various recipes!! Thank you!!

Every year we normally make a trip to Hatch NM to pick up our chiles. This year with our workload and time constraints we couldn’t make it. I researched online where I could order my chiles and took a chance with the Hatch Chile Store. I opted to pay additional shipping and they arrived as the ad stated and were better quality than the burlap bags of Chile I would buy in Hatch. I guarantee these chiles if you go with the two day ship. You most def will not be disappointed. Plump, fragrant, subtle, and absolutely delicious!

I received the order and within a day they went bad. I had to toss the entire order. This was very sad since last years order was so good. I guess I’ll just order my Hatch Green chilies from Stater Bros in the future.

Being from Colorado, we grew up with Hatches green chilies. Bought fresh roasted every year. Most Florida only knows jalapeno peppers. This was the first year we found them at local produce stands. We augmented our order from New Mexico with local bought ones.
There is nothing like them and it gives the chance to have a " taste of home "
Thank you from a displaced Coloradian.

The product is excellent. There is no other type of chile that has rhis fresh, high desert taste. This company ships on time, or if it might have a slight dekay, it does a very good job of keeping you in the loop. Chiles arrive fresh and Well-packaged.

Incredible flavor! I bought the mild for my 91 year old mother--who was actually born in Mesilla--and she absolutely loves it. I still buy the hot and extra hot for my immediate family and can't say enough about the quality and convenience of the chile from the Hatch Chile Store. I used to have to drive once a year into Los Angeles (100 miles from my home) to buy authentic Hatch roasted chile. Then I would have to come home and peel and pack for hours.

Seems like delivery was a day or 2 longer than the other shipment. I had 3 spoiled peppers and most of the peppers were curled and not straightened, which makes it a little harder to roast and not suitable for chile rellenos. Was not thrilled with this shipment. Sorry.

These chilies are great! I originally ordered 25 pounds of chilies, and for whatever reason 6 lbs. went bad. So I wrote a review and gave them three stars, only because of the ruined chilies. Then Elaine, from The Hatch Green Chile Store, contacted me about the bad chilies and replaced the 6 pounds of chilies! Wow great service and they backup their product!
I will definitely order from them again!

While this product has great flavor, I believe that "mild" is really up for interpretation. Much hotter than I was expecting and I would have chosen something a little less sweat provoking.
I'm sure people that have grown accustomed to life in Hatch, NM wouldn't agree with my assessment and I certainly understand. I still support this company 100%.

Usually I order Big Jims for roasting. This time I ordered the X-Hot Hatch Chile (Lumbre) for making a pepper mash. The chiles are ground in a food processor, salt is added, and the mixture is put in a crock to ferment for months. The chiles must be fresh and unblemished. Hatch Chile Store chiles were perfect! And, yes, they are quite hot.

Very few of the chilies were fleshy. I remember having a slice of chili on a burger in NM and loving it. That is what I was looking forward to. We roasted and peeled a 5 lb. batch of chiles and only a few were fleshy enough to call a 'slice'. Most were thinner flesh than the skins we peeled off. Your site indicated that your chilies were shipped the same day they were picked. Several had rotten ends, and some were 40% rotten. Not impressed and frankly, disappointed.
