I Love this sweet and spicy mustard !

First time ordering red and first time for sandias- amazing! Always loved the medium hot green but now I'm torn lol. Guess I will be buying both from now on! To me the flavor of New Mexico is in its chilies and, living in NY, I am thrilled to be able to receive these green chilies, already roasted AND peeled! I let the bag soften just enough to loosen the chilies & quickly lay them on a board in the freezer to re-harden & plop them in a freezer bag so I can pull 1 out at a time. I scramble 1/4 of a chili with an egg for breakfast & it's heaven.

These were replacement Ristras for some that we have had since the beginning of Covid and that were literally blown to bits in the recent rain and winds here in Southern California.The new ones from Hatch are plump and gorgeous! We have two on our front doors and one in back over the outdoor fireplace. We're delighted!

I use this in so many different things! Great flavor, and I pretty much toss it in whenever 'green chili' or even 'green pepper' is called for in a recipe. Or just toss it in with some scrambled eggs and cheese . . . highly recommend it!

My medium roaster arrived in perfect condition. I can't wait to try it out when my yearly supply of Sandia's arrive in a couple of months. I order between 25 and 50 pounds every year and have wanted a roaster for a long, long time. It takes me back to the 12 years I lived in Albuquerque when I had my chiles roasted in one of the industrial sized roasters.

The pods were delivered in good shape. I used them all at once in a fairly big batch with my standard recipe. I added all the standard stuff, a couple of the little cans of hatch green chiles, half an onion, half a can of diced tomatoes, some cilantro, garlic, and other spices.
Everything seemed to come out okay, but the resulting sauce has a strange tangy vinegary sub-taste to it that I never got before. Not sure what happened. The sauce seems to have less heat than I expected, but that's okay. We will use some tonight (Friday is mexican food night) and see how it works out. Hopefully nobody will get sick.
