This sauce delivers on heat, but seems to be a bit watered down. It just felt thin to my taste. I bought a case of this, and I use it as a base to make tastier sauce. The good news is, what you are getting here is pretty much pure Chile flavor, so you can add a little chicken stock, a little avacado, and yeah, even a little cilantro (don't hate) to thicken it up, and you will wind up with a dynamite flavor. No pesky vinegar here, or anything else that cannot be covered up.

Yes 👏 I genuinely love it and got some when I was in Santafe but due to the pandemic 😷 haven't been able to pick some up when it arrived in the mail my husband immediately opened the jar and a bag of chips. I regret that I didn't get enough so I'll have to get more. Thanks 😊

An absolutely great chile. I bought the whole chile's so I could adjust the heat with the seeds. It wasn't as hot as I expected or maybe it was the great flavor and I didn't notice the heat very much. After making an incredibly good omelette I made some taco's and left all the seeds in. Excellent chile and service from this company.

I am from New Mexico and love my green chili. I normally consume medium to hot strength in all varieties. On this occasion in order to make chili rellanos for our Indiana friends I ordered mild chili. I roasted the Chiles the day before the great event and wow as I bit into it my mouth was on fire and getting hotter. So I devanedand deseed all the pods fixed the dinner in my and my sister's (also from New Mexico) opinion we had at least MEDIUM grade chiles. Secondly 4 or 5 of the chiles were to small to make a nice presentation. Vary, vary sad about your product and even less happy with your solution.

These are the best! I use twenty-five or thirty mild chilies along with a few medium - heat chilies to make classic Sonoran - style chili colorado. To the basic recipe I add 2 - 3 lbs of lean pork loin cut into 3/8 - in. cubes and browned down before combining. After combining turn the stove down and let it simmer for a couple of hours.

AS more and more gringos discover green chile, the heat levels fall further and further. When I lived in NM in the 80's and 90's, the chile in local restaurants would make you break a sweat. When I went back for a visit a few years ago, the heat of the chile was such that you might as well have been at some On The Border in Canada. Hatch has done the same thing, creating a new strain that falls between Big Jim (medium) and Sandia (hot). But the Sandias and especially the extra-hot Lumbres still pack a kick. It's all I ever buy. And I thank them for keeping it available for old Lobos like me.
