I've written about how much I appreciate the Roasted Hatch in the past, and how much processing time it saves me not having to wash, roast, peel and freezebag them. I'm not a heat freak by any means, but green chile must have some heat or it's not chile. I'm a little disappointed in the recent batch (2025 harvest) of Hot Chopped Green Chile... it could be hotter and still not blow my head off. That's where a master blender might come in handy. Get on it, won't you?

I place orders for your chile yearly. The shipping options don't impress me. Your choice of carriers doesn't either. My shipments almost always arrive at the end of the day when it's too late to roast them. Morning delivery must be an option.

A wonderful company to order chile peppers from. We've used them a couple of times now and delivery is always prompt and product is always fresh. LOVE the smell of the chile peppers when they've arrived and are sitting on the kitchen table waiting to be roasted, peeled and frozen. They fragrant the whole house! I use this all the time to make my enchilada sauce and it is a family favorite. I really like the depth of flavor that I get in my sauce. I make a double batch and freeze it in a sectioned off soup style cube tray. Then take out a few 2 cup section at a time.

I love the Hatch Chiles. I make Salas with them. The only issue I seemed to have, was the drying of them. I usually string and dry them. However we live in Georgia, we had a little wetter summer, more humidity. I tried drying in the oven, but didn't dry well.
Other than that. Still love them.

LOVE Hatch Chile above all other. It just tastes better…period. I don’t make your traditional dishes. I boil rice, add chile (Hatch of course) and cheese - yum!!! I grab a tortilla, cover with cheese, add some Hatch Chile nook for a minute, roll and eat - yum!!!!
