Wow, what can I say. Being from IL I e never cooked with hatch but had heard a ton about it. I've never ordered food in a box so at first was a little concerned that the peppers were shipped ina box but that concern all went away soon.
Found a green chili chicken stew on seriouseats that seemed destined for hatch.
Followed the recipe and holy cow. What depth from the chilis!
Will buy again!!

Nice chilies in box. Only a few bad ones but overall quality was good. Only issue was I received the email for a delay in delivery but never got a new email telling me they were coming. They just showed up. Not good as we live in Nevada and they were sitting in the sun because I was not expecting them.

Despite the week delay because of the rain, the chiles arrived OK and were very much appreciated by my daughter. She proceeded to roast, peel and vacuum pack them until next week that she will use them for tamales. Great product, thanks.

The order came good. The mild hatch peppers came soo hot, you could not use the peppers in mild sauce you had. sSo the amount of money I spent for the peppers was worthless. I can use the hatch peppers.

It is hard to find green Chile where I live that is not canned. Then, one day, I accidentally found The Hatch Green Chile store online, and seen their variety of Green Chile. I ordered 4lb, and when it arrived, I roasted them up in my charcoal grill, and brought them into the house. I had the house smelling like my grandma's house did when I was a kid. She made Green Chile at every family gathering, and I would eat way to much. No matter how much I sweat, or how bad my mouth burned, I could not stop. This brought back great childhood memories, and the Green Chile was exactly what I expected, hot, and flavorful. This weekend, 8/19/2017, I am going to make an omelette, smothered in Green Chile. I am drooling as we speak! Mmmmmmmmmm, mmmmmmm, can't wait!

My mother in laws family is from New Mexico. They have been roasting hatch Chile for decades. A lot of her family have either moved out of state (we live in california) or have passed away. I bought the small table top roaster as a surprise gift for her. She loved it ! It worked great ! Very well built ! The chilies roasted perfectly !

I read about the Franzoy family in the New Mexico magazine when visiting Santa Fe last August and decided to place my 2017 order with this family owned business. Also, I believe I read that Tomasita's in Santa Fe orders their chile from the Franzoy family and it is delicious. It would be nice to know if their green chile sauce is just Big Jims or a combination of different chiles as I'm trying to capture the same flavor at home.
The Hatch Chile Store notified me they were about to ship just as I was leaving town and were very accommodating with delaying my fresh chile order until my return. It appeared that the shipment was on the UPS truck all day long in Arizona, so I was disappointed that UPS could not even ring the bell to let me know it was there. The box of Big Jims was warm upon arrival, so fortunately I was able to start washing and roasting it right away. The chile seems to have very good flavor, but does not seem to be as spicy as I hoped. It would be nice to have access to a chile forcast so that I can tell whether the chiles will be mild or med-hot each year. Thanks!
