Everything here comes from the Hatch Valley in New Mexico — grown on farms in the same valley where Joseph Franzoy planted the first commercial Hatch chile crop in 1917, a tradition our family has carried forward for five generations. The chile is processed at our packing shed in Garfield, NM; the frozen items are made at Amigo's Mexican Foods in Deming, NM, a USDA-inspected facility that has been making New Mexican food since 1978.

Roasting and peeling any Hatch chiles, red or green, is a labour of love. But, after plowing my way through 10 pounds of red chiles (medium heat), what remained once the peppers were bagged and tagged, were tingly fingers that smelled like a special place in heaven. Could have been a Hatch pepper field. Ahhhhhhh, so special. The lingering aroma alone makes the labour all worth it. When I placed the order I was expecting dried red chili. Website started fresh red Chili with no indication it was fresh “wet” chili pods. I made over fifty calls to customer service with numerous messages and after a week I finally received a callback - poor customer service. In my opinion ad description should indicate “wet” or “dry” pods so that customer knows exactly what they’ll be receiving. I had to hang pods to dry. I very much like the hot sauce, it's a "fresh" way to add heat to other condiments. I've used the Hatch Hot with General Tso sauce to bring the heat, and I've used the Hatch 575 Hot to add heat to pizza sauce ! I got my jar last week, and it's half gone already.
